Without a car, I suggest get to the nearest 'Bus Hub' (Disney Springs, MK, etc.) to start your journey. The other transportation options will become available based on your stops (and time of day).
Take Uber/Lyft to MK, they'll drop you off at the TTC and from there you can walk next door to the Poly and start your monorail crawl there. (Mixed results with being dropped off by rideshare at the monorail resorts if you don't have an ADR, which is why I suggest this instead) Once you've done your loop you can take the bus from MK to one of the Crescent Lake resorts and walk around the Boardwalk. From there you can hop the Skyliner at Epcot to do a crawl of those resorts if you want.
I would suggest riding the Skyliner and checking out the beautiful Riviera Resort. It is so relaxing and just feels like you are not in a theme park area at all. Bar Riva is such a fun open air bar which fantastic drinks and appetizers. The gift shop while small is so quaint. The quick service place, the little coffee shop and the library next to Le Petite Cafe are all wonderful. S is the lobby. We even enjoy just sitting out front on the benches listening to the water feature and watching all the happy families come and go.

Basically, if you want to eat at just about any Disney table service restaurant, they require a 'reservation.' (Except WDW dining isn't a true reservation,) As a solo diner though, a good option would be to dine at one of the resort lounges (bars). You can get a meal without needing a reservation. Use My Disney Experience to search up options that appeal to you.
