Ideas for Christmas Vegan breakfast??

Hi, Dissers,

Can anyone help? My vegan DS and DIL are coming home for Christmas from Taipei!!! I really want to make Christmas special, but don't have a clue what to prepare for Christmas breakfast. anyone have any great Vegan recipes, breakfast or otherwise?
 
I've never cooked vegan, but here's a link to some vegan breakfast recipes.

Maybe you could just stock up on some vegan items and they may want to cook themselves. Our grocery store has a large healthfood section. You could get soy milk, soft/firm tofu, soy breakfast sausage, soy scrambled eggs, vegan frozen waffles...

What about some thing fruit based? A really fresh fruit salad might be a nice change of pace?

How does the rest of the family feel about this? I would love it if vegan recipes (especially baked goods) tasted close to regular, but they don't. It's a very nice gesture to want to make a vegan breakfast for them, and you should definitely have things they can eat available, but I would feel guilty if others didn't get to enjoy their holiday favorites because of my diet.
 
Check out these cookbooks: How it all Vegan and Garden of Vegan. They both have lots of breakfast items such as french toast, muffins, pancakes, and waffles. The recipes in these books are outstanding!

I am a vegan and I think it is wonderful that you are going over and beyond to make your vegan guests feel comfortable.
I use smart balance lite as a substitute, NOT regulare Smart balance as that has whey in it. But the smart balance lite is all vegan.
I always have frozen bagles with that.
Other then that I am not much of a breakfast person.

baked goods can be made with soy milk to substitute for regular milk and applesauce (or any other mashed up fruit like banana, or even veggie like sweet potato) to substitute for eggs. Use a bit less sugar to compensate for the sweetness of applesauce and soy milk. This will work for pancakes, waffles, and muffins, among other things. (if you check labels carefully, you might even be able to find baking mixes that are vegan which you can add soy milk/applesauce to).

As far as whether they will turn out like "the real thing" ... no. But I've made quite a few vegan baked goods using applesauce/soy milk and they generally turn out quite tasty. They will be extra sweet and moist because of the mashed fruit. (mmm...). There will be some differences in terms of how much the baked goods rise and also differences in texture. I'm sure your vegan relatives won't be upset by these differences - they probably bake like this all the time. Nonvegans will probably find these baked goods quite palatable. Serve with margarine, powdered sugar, and/or syrup and everyone can enjoy them.

Morningstar Farms, Boca, and Gardenburger are good brands to find soy stuff -- their soy sausage, bacon, ground "meat" and other products are very good. Non-vegans will even find the soy sausage quite tasty. I *love* the soy bacon by Morningstar Farms -- its delicious. Cook it longer than the package directs to get it extra crispy.

You shouldn't have any trouble finding a good selection of food to be enjoyed by vegans and non-vegans alike.
 
I agree with themarquis. My DH's parents are both vegetarians and I really like the Morningstar Farms Brand. I use it myself. You can find it in the frozen food isle in your grocery store. The soy sausage is good as well as the bacon strips!! There is also Morningstar Farms Scramblers which is an egg substitute (I have never tried it but I'm sure it should taste good *just add some salt and pepper for taste.) I cook the sausage in a skillet litely coated with olive oil or a vegan butter and add some Natures Seasoning as well as a little worcestershire sauce. For the bacon strips also cook in a skillet coated with olive oil or vegan butter, you could also use a vegetable broth. I would add some fresh fruit to the breakfast and orange juice or soy milk to drink or both. There is a soy milk brand called Silk, and it is really good! They have all different flavors. I like the vanilla. They also have Silk brand creamers for your coffee if they want a cup of coffee with cream. Also you can make a smoothie from Silk soy fruit smoothies. I hope this helps. Just don't use worcestershire sauce when cooking for vegetarians/vegans. It has anchovies in it.
 
Thanks for pointing that out. I did not know it had anchovies in it. :confused3 It's a good thing I never made this for my husbands parents! So yes please skip the worcestershire sauce. Soooo Sorry about that!!
 
Another item to be careful about using is honey, which vegans consider to be an animal by-product.

I agree with previous posters -- the Morningstar Farms brand of sausage and bacon is great.

One more suggestion, if you have a natural foods store or co-op in town, it might be worth a trip to check out their products and talk with some of the employees about vegan food products and recipes. They folks at my co-op are always glad to help people with questions, and their take-out deli usually has some great vegan food.
