To save some money on this upcoming trip we will be taking advantage of our condos full kitchen.

As such we will be bringing in most of our food into the parks.

However I would like to add a little variety instead of just having sandwiches every day.

We will be eating at our condo on occasion so will have hot meals like pasta, crock pot etc.

But do any of you dissers have any good ideas for easy meals that we can bring into the parks?

Cold fried chicken?
Pasta Salad?
Cheese and Crackers?
Hard Boiled Eggs?
Cold grilled meats like chicken or london broil?

I do a lot of BYO and am not a big sandwich eater.

Pasta salads work well and are so easy to customize. I make Italian, Tex-Mex and Greek-style salads just by changing up the ingredients.

I also like hummus with a variety of dippers-toasted pita, pretzels, celery and carrot sticks.

Crusty bread with a variety of cheese, olives, nuts and grapes. DH likes salami with this too.

Yogurt, blueberries, banana, granola make a nice late breakfast or snack.

Wraps:
(Use pretty much the same ingredients as with the pasta salads)
Chicken Caesar-chicken, Parmesan, romaine, Caesar dressing
Mexican-chicken, black beans, tomato, cheddar, guacamole
Middle Eastern-hummus, feta, tomatoes

I use this to keep everything cool:

Instead of sandwiches, you might bring a bunch of cheese, crackers, pepperoni, some sliced veggies like peppers/cucumbers/grape tomatoes and dip and some fruit.

We hike and go for day trips at home a lot so I have a pretty standard list of things I like to take out and about with me.

crackers, cheese, pepperoni/lunch meat

fruit (grapes, berries, banana, pineapple, strawberries, watermelon, cantaloupe, oranges,)

apple sauce

yogurt

veggie wraps

veggies and dip (ranch, caesar, hummus)

grape tomatoes, cucumber, baby carrots, celery, broccoli, bell pepper, snap peas,

pizza wrap: cheese, pepperoni w/ sauce to dip

If u freeze yogurts they are easy to pack - they keep other foods cold and depending on when u eat them they either go from being a nice frozen treat to a cold yogurt.

Thank you all so much for the ideas, these are all great ideas!

mj512 I love the frozen smoothie idea! I'm going to order some of those silicone molds with my swagbucks :)

jsmla I love the PackIt lunchboxes - my DD and I both have one for work/school and I found a picnic sized one last summer, so we'll definitely be using that to bring our lunches in. Works so well!

Thanks again for all the great ideas - you've just perked up our in park lunches :)
