IBS/Gluten intolerance...question

This may be a little long so i apologize in advance. I've lived with IBS for about 15 years but have really suffered this past year and it seemed like everything I ate was making me sick. Finally went to a new doctor who suspected a gluten issue so I had some tests done. Blood work came back negative to Celiac but he still felt I could have an intolerance so I went to a nutritionist and did the FODMAP elimination diet and eliminated all gluten as well. We slowly re-introduced the various foods back into my diet and I did well but found that I couldn't tolerate certain foods/beverages that contained artificial sweeteners as well as anything with high fructose corn syrup and nothing fried. As it pertains to wheat/gluten, my biggest issue is with breads and pastas-I have tried several different varieties of breads & pastas and have had the same sick outcome. I seem to be ok with other foods that contain gluten (sauces, marinades, etc) as long as I don't eat much of it. So for the last two months I have been following an IBS/low gluten/GF diet and when I do eat bread or pasta, I stick to GF & my intestines have been much happier. So my question? how easy or how difficult will it be to ask for a GF roll if I wanted let's say to order a hamburger at one of the QS restaurants? Do they all carry it? I really didn't want to note gluten intolerant on all my ADR's as I am able to eat certain items without any issue but again it's the carbs (breads & pasta) that are my biggest issue so far. Any insight is greatly appreciated.
 
Your scenario sounds so familiar to mine! as far as your diagnosis goes have you looked into SIBO?? I went GF and felt about 80% better, but when my doctor suggested perhaps my IBS was really SIBO and I was prescribed an antibiotic (now I take about every 3 months or so with reoccurrence) It was the first time in years I have been symptom free! Anyways...onto your question.

Gluten, as you know, is hidden in so many things..I, therefore, try really hard to not get any. I do list the "allergy" on all my ADR's and have had great experiences at Disney. The only issues I have are at the QS's...getting to talk to a chef can be quite time consuming (I've had to wait 5-20:furious: minutes) before I was allowed to order. I did read this somewhere and the most helpful tip was to order all my families QS items and Pay for them..Then order mine. That way the hungry kids can eat, while I wait to talk to a mgr.

Thanks for this. I did PM you about SIBO. Also, in your experience, do you know if I did go to a QS and wanted a sandwich or burger on GF bread if they have the bread readily available? If not, it's not a big deal as I'd just order the protein and skip the bread all together.
 
I want to say "yes" they have the buns (but can't remember if that was at QS or TS)...but they don't know how to prepare them so they come out like Hockey pucks!!..I'm a big fan of the chicken fingers and fries (since I don't eat them at home) and would get this all the time.

If they have the buns..ask them to just microwave them about 15 seconds and that's it!

Disney is my absolutely favorite place to dine on vacation!
 

Most places that sell burgers have the gluten free buns. Each place has their own way of preparing them. Some serve them as-is, some microwave them, some grill them and some I have no idea what they do. I would make a point of telling the manager with whom you're working that you aren't worried about cross contamination and that you can handle fries cooked in the same oil as gluten containing products (assuming that's true; it looks to me as though it is from what you've said) beause that'll make your order go a LOT faster.

I'd prefer to take the bun as is...

I haven't had an issue with cross-contamination so far, so that's a plus. Unfortunately I've had to do away with deep fried foods because of my IBS(french fries are my favorite too :sad1:). I've learned the hard way that if I eat anything deep fried, I will pay for it...
 
You can get the allergy chicken tenders and the fries baked at many places. That's how they typically cook them for those with gluten issues. A few places have dedicated gluten free friers but not many. Those that don't just bake them to make them safe. So, if the problem is the cooking method then maybe you can have fries and even chicken tenders.

Oh, now that I did not know! I just assumed that things like chicken tenders and fries would be fried. I haven't had french fries from a restaurant in over 3 months. Normally if I'm in the mood for some fries, I cut up the potatoes myself and bake them at home. Thanks for that...I'll have to look into it.
 
Yes, you can definitely get GF buns readily available at most QS locations. I've never had a problem finding a place that didn't have them.

The old buns they used to use were Ener-G rolls and they sure did turn into hockey pucks after a few minutes of not being warm. Yikes!
Now they are using the Udi's rolls (which unfortunately isn't as inclusive of allergies, particularly egg), but they are GF and yummy! My mom (who is not GF) loves them.

I will second clanmcculloch about the allergy friendly fries and chicken tenders. They do bake them at most places (or will if you ask). And they are delicious!

I can definitely relate to your story. I have Crohn's disease and IBS and am gluten intolerant and allergic to dairy. It's tough sometimes to figure out what to eat, but I will say that in the 3 1/2 years of dining at WDW with food allergies, I've never really been sick, and I eat a lot of things that I might not normally at a regular restaurant. They are really wonderful, especially at modifying something (which I do on occasion when my stomach isn't feeling too hot)
 
I don't have a strong gluten intolerance (everybody is at least somewhat intolerant, most just don't realize it), but am avoiding wheat/gluten for other reasons. Pretty much any restaurant will give you a hamburger without the bun, and they're pretty darn tasty that way. Even better is when you can get it wrapped in iceberg lettuce instead of the bun. In 'n Out Burger (obviously not available at WDW) calls this "protein style", and it's FANTASTIC.

So I say, why bother with the bun at all? It's merely a wrapper that nearly doubles the caloric content of the meal while adding zero nutritive value, and making you get hungry sooner, to boot. My wife and I thought we would miss bread, but 5 months in, we seriously don't.
 
Hi can anyone advise if there are buns or rolls that are free of High fructose corn syrup as well as my daughter can not have this but can tolerate a little wheat, thanks all

I don't do HFCS and as far as I know all brands of WDW buns/rolls are HFCS free, though there can sometimes be corn in the bread (like corn syrup solids). This is the brand that they use now:

You can tell the difference between the two when you see them- the Udi's looks like regular old wheat bread, and the Ener-G are quite a bit smaller and light in color (you can sort of tell this from the pictures on the websites).

Most GF products seem to be free of HFCS, but as always, read your labels!
