I'm not familiar with the I-75 book you describe, but there is a book that describes I-95 on an exit-by-exit basis. It's actually a companion book to an online web site:
The I-95 Exit Information Guide Online
From the web site, you can order the I-95 Exit Information Guide. It is a spiral-bound paperback book with listings for restaurants, gas stations, hotels, etc., at each exit along the I-95 path (including a few alternate routes such as city bypasses and even I-4). This is by no means a fancy book (no color photographs, fold-out maps, etc.), so it may not be completely comparable to the I-75 book, but it has the advantages of being cheap ($8.95 currently) and relatively frequently updated. (My copy is only about a year old, and it is the fifth edition...The current version on the web site is the eighth edition.) I found it to be a nice reference on our last trip to WDW...I've already marked mine up with my comments on places we stopped (cleanliness of the rest areas, ease of access to the restaurant/gas station, etc.).
