I need substitutions for special events...

it looks like we're not going to be able to go in November, and the only availability we have is in MAY! <yikes>

So, I need to find some fun things to do to replace our plans for MVMCP, the Candlelight Processional, and all the cool christmassy things we had planned to really show them a good time.

Any ideas? What's fun in MAY?
(aside from the obvious)

I'm thinking Fantasmic dinner package - I have read mixed reviews of Ohana and being vegetarians, some of the other "dinner packages" aren't too "friendly" for us...so I need some good creativity here
