I need some recipe help.... Please ??

Staff appreciation day is coming up next week and I need a great "brunch" type recipe to make. Last year I made the cream cheese stuffed french toast and want to try somehting different this year for them. I know I have had some wonderful breakfast items at WDW and want to share some with the staff at school. Anyone have the stuffed french toast from breakfast in the castle? That stuff is good ! Also, breakfast pizza ? I know I have had this there but can't remmeber where or what was on it.

Any idea's will help and I need to make it for about 40 people.

I make Strata for my office, they love them. I make it ahead and refrigerate then place it in the oven just efore bed and set the time on the oven. when I get up for work its ready to go and eat and stays warm in my temptations dishes even with a 45 minute commute to work!

Sausage Breakfast Strata
Ingredients
• 12 slices Italian bread (1 large loaf) cut into 2 inch cubes.
• 2 cups cheddar cheese, grated
• 9 large eggs, beaten
• 1/2 teaspoon onion powder
• 1 teaspoon worcestershire sauce
• 1/2 teaspoon mustard powder
• 1 Green or red bell pepper diced
• 1 medium onion diced
• salt & pepper
• 2 1/3 cups half and half
• 2 lbs your favorite sausages, slipped out of their casings (Brats, hot Italian etc).
Directions
1. Grease a 9x13-inch baking dish.
2. Scramble fry the sausage meat until cooked, drain off all the fat.
3. Line bottom of dish with ½ of the bread cubes
4. Sprinkle in the cheese.
5. Pour the fried sausage meat, onions and peppers over the cheese layer.
6. Cover meat with remaining slices of bread.
7. Beat the eggs together with Half and half, salt, pepper, onion powder, Worcestershire sauce, & mustard powder.
8. Pour over the bread in the baking dish.
9. Cover& refrigerate overnight or at least a few hours

When you are ready to bake it preheat oven to 350°F Have the strata dish close to room temperature (so you don't crack the baking dish with it being too cold). Bake for approx 1 hour or until set. Recipe makes 10 servings

French Toast Strata
Ingredients
• 1 lb French bread, cut into 1 inch cubes
• 1 (8 ounce) package cream cheese, cut into 1/2 inch cubes
• 9 eggs
• 2 1/2 cups half-and-half cream
• 6 tablespoons butter, melted
• 1/4 cup maple syrup
• 2 Tbs Cinnamon
• ½ tsp nutmeg
• 1 tsp Vanilla extract
• Optional: fresh fruit and nuts ( apples, peaches, berries, pecans)
Directions
1. Grease a 9x13x2 rectangular baking dish.
2. Place half the bread cubes in the dish.
3. Sprinkle with cream cheese cubes and then remaining bread cubes.
4. Combine eggs, cream, melted butter and syrup.
5. Mix well and pour over bread and cheese cubes.
6. Using a spatula, press layers down to moisten.
7. Cover with plastic wrap and refrigerate for 2 hours, or overnight.
8. Remove plastic wrap and bake uncovered for 35- 40 minutes at 350ºF, or until set and golden brown.
9. Let stand about 10 minutes before cutting.
10. Top with your favorite syrup.

Serves 8-10 people.
