I need menu suggestions for Thanksgiving.

Clam dip.


I can't find my exact recipe but I remember it.

1 can of minced clams

1/2 of small onion-finely chopped

1/4 cup parmesan cheese(I use Locatelli pecorino romano)

1 tsp garlic powder-maybe a bit less

1 tsp oregano

1 sleeve of Ritz crackers crushed

Mix everything together including the juice from clams. I put it in a ramikin and bake for about 40 minutes..until it is brown and bubbly. I squeeze lemon juice over it and serve with Ritz carckers and lemon wedges. I put a knife in the dip so there is no 'double dipping':lmao:

Thanks. I won't make it for Thanksgiving, but it sounds just delicious. I will make it for another party.

Ok, I must have the Cranberry Daiquiri recipe.
 
I would think you could substitute a really good quality vegetable stock for the chicken broth in the soup.

The daquiris are just canned cranberry sauce ( the smooth kind), powdered sugar, a little lime juice, rum and ice in a blender. Blend until smooth. Sooo good!



Sweet Potato Stuffed Baked Apples


Ingredients:

2 pounds cooked mashed sweet potatos

6 Tablespoons brown sugar

6 Tablespoons butter

6 baking apples

1 cup small marshmallows



Directions:

1. Preheat oven to 350 degrees. Mash sweet potatoes with brown sugar and butter, until potatoes and butter are still slightly chunky.


2. Wash and cut the tops off of the apples.


3. Core apples and scoop out the the insides, leaving 1/4 inch of flesh inside the skin and bottom of the apple. Do not pierce through the bottom of the apple.



4. Fill apples to the top with the sweet potato mixture and smooth off the top.


5. Bake apples for 40-50 minutes or until apples feel soft when pressed. Top each apple with marshmallows and broil until golden brown.


6. Allow apples to cool slightly and serve.
 

I make a really great clam dip but I just saw you don't like dips. It tastes like a baked clam. let me know if you want the recipe anyway.

I may be an idiot, but are the stuffed apples a desert or a side dish? I can see them as either.
 
I use them as a side dish, in place of the sweet potato casserole.
 
We love sweet potato muffins! We use the Williamsburg recipe. These can be made ahead and frozen. Just take them out when you put the turkey in to let them thaw. When you are ready to put them out...pop then in the oven to wake for a few minutes. If you are interested in the recipe, PM me and when we return home tomorrow, I will type the recipe up
and send it to you.

Nope. the juice from the clams keeps it moist, plus the Ritz are buttery also. Oops...I fogot the butter!! Thanks for reminding me:thumbsup2 You add 1/2 stick melted butter also. I will edit the recipe in my post.

Everyone likes shrimp cocktail for the holidays. Prosciutto wrapped around melon or fruit salad are other nice first courses.

That clam dip recipe sounds very good. :) I will try it.

For a side dish, how about stuffed mushrooms? I make mine by sauteing onions and garlic in butter, then adding the chopped stems to the pan and cooking a bit. I put the mixture over bread crumbs, season it and mix it. Then I add a good amount of grated Reggiano. I stuff the mixture into the caps, place them on a buttered baking sheet, then put a little dot of butter on each. Bake at 350 for a half hour or until the caps look cooked.

You can make these ahead of time and reheat in the oven.
 
I don't really want to make anything with shrimp or prosciutto because of the vegetarian guests. The only thing I want at the table that they won't be able to eat is the Turkey. I'd like them to be able to have some stuffing and gravy so I will have veggie alternatives. The mushrooms sound heavenly though.
 
How nice, I usually play hostess too so I favor 3 stations for all my holiday meals, they start out as appetizers but I keep them on the table as extra sides during the meal.

I usually put out some Brie topped with caramelized nuts alongside sliced apples and pears tossed in lemon juice and seltzer so they don't brown too fast. For a recipe check out Paula Deen's version called "Sugar and Nut Glazed Brie".

Another favorite of my family is a bread bowl with spinach veggie mix inside. What I do is pick up the Knorr mix and follow the directions for the spinach veggie dip. I pick up a round loaf of bread, cut off the top and scoop out the inside and cut it up into chunks, then I serve the dip in the hollowed out bread bowl. I always add some crackers too.

My third standby is always 3 bowls of Hummus, Baba ghanoush and Bruschetta served with little bits of pita bread and Italian bread. I am lucky to have a Wegmans near me and pick up all this stuff from the Olive Bar area but if i didn't I would just go with the Hummus.

If I have kids who I think will snub the grown up choices I add either home made pizza English muffins or a box of pizza bagels and a box of Purdue chicken nuggets.

For Thanksgiving standard sides I always do bread with butter, sweet potatoes, cranberry sauce, carrots sauteed in butter and onions and fresh steamed green beans buttered with browned almonds.

My table is a feast and even my vegetarian SIL is delighted:goodvibes
 
I have two Uncles who are Vegetarian and my Dad always made them a small pan of stuffing and gravy separate, Minestrone or Cream of Broccoli soup made with Veggie broth. (I actually like it better with Veggie Broth!) Both have plenty of protein and are quite filling. They both seem to prefer plain steamed veggies in large quantities over any kind of veggie dish. Add your mashed potatoes, sweet potatoes, rolls and desserts and they were as stuffed as we were.
 
What about a baked pasta dish as a side for those who want one and main dish for those who don't eat turkey? Simple mostaccioli (penne, marinara, cheese) or veggie lasagna would be one option.

The quiche is another good option assuming they eat eggs and cheese. I also love stuffed portabello mushrooms. Our stuffing has eggs in it, but I could make that as a side dish for my meat eating crew and they would love it!

This sounds absolutely YUMMY but I don't think anyone has mentioned it yet - marshmallows aren't vegetarian. But I think it sounds good even without them!!
