I need help - in charge of making a casserole for Potluck

I'm in charge of bringing an "entree" casserole to a potluck for about 25 people. Any good ideas? What's your favorite?
 
I use this one often....

2 rings of kelbasi
5 lbs of potatoes
2 green/red/ or yellow peppers
1 large or 2 med onions
butter or margarine

Kelbasi or Smoked sausage cut up into pieces about 2 inches in length. Then I wash and cut up potatoes, slice a couple onions, and two peppers. Place all of this in a large roasting pan or casserole. Top with a blop of margarine of one stick of butter sliced into pieces. Cover. Bake for 1 hour on 375 or until potatoes are cooked through. Yummy and simple. For 25 I would double this.



Heres another but its a main dish salad

1 lb of ground beef
1 taco seasoning packet
1 large tomatoe
1 small can sliced black olives
1 small onion sliced
8 oz shredded cheddar
1 bottle of italian dressing
1 bag of regular flavor doritos
1 bag of lettuce or 1 head chopped

Brown 1 lb of ground beef, season with taco mix and water following package instructions for tacos. Cook down until thick.

In a LARGE bowl place a bag of lettuce, a chopped tomatoe, some sliced black olives and a small onion sliced. You can eliminate the olives and onions if you'd like too.

Take this to the potluck just before serving time add the taco meat, a bag of crunched up doritos, 8oz shredded cheddar and about half a bottle of italian dressing. Toss and serve.
I always at least double this. For 25 I would probably triple it. The good thing is its easy, and if you live near an Aldis you can use their ground turkey (79cents a pound) taco seasoning (29Cents) shredded cheddar (2.69 for 16oz) and their italian dressing is under a buck. Makes it realitively inexpensive. I take this to church potlucks and the bowl is clean in seconds....lol...everyone loves it! Oh and if you want to stretch it add a little extra lettuce, it doesn't effect the taste at all. Yummy!!!
 
Impossibly Easy Cheeseburger Pie
Get all the great taste of a cheeseburger magically baked in a pie.

1 pound lean ground beef
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 ounces)
1/2 cup Original Bisquick® mix
1 cup milk
2 eggs


1. Heat oven to 400°F. Grease 9-inch pie plate. Cook beef and onion until beef is brown; drain. Spread in pie plate; sprinkle with salt and cheese.
2. Stir in remaining ingredients until blended. Pour into pie plate.
3. Bake about 25 minutes or until knife inserted in center comes out clean. Cool 5 minutes.

I've made this a few times and it comes out really well. I've doubled it into 2 pans, but for an event on Saturday I'm going to double it and put it in a 9x13 casserole (unless I decide to make something else, Paula Deen has a good Broccoli casserole recipe on foodtv.com). I never use a "real" pie pan because we don't have one. Pyrex or similar works fine, just make sure the size is similar to a pie pan. It's easy and made my family stop saying I couldn't cook!
 
Chicken Green Bean Casserole:

1 can French style green beans
1 can cream of celery soup
1 fryer (deboned and cooked)
1 box Uncle Ben's Wild Rice (cooked according to package)
1 cup mayonaise
1 onion
Season to taste

Boil chicken fryer and debone. Mix all ingredients together. I usually use garlic powder, salt & pepper to season. Bake at 350 degrees for 1 hour. Very easy and yummy.
 

Thanks everyone! I get tired of taking the same thing over and over and your recipes all sound great! Now I just have to decide which one I want to try first. :earboy2:
