I can't figure out what to do can I get some insight.

We plan on doing Disneyland 3 days (wont take advantage of MM) Knotts, Universal. I ideally want to avoid doing two parks in a row with the exception of Universal since its not an all day park.

(Sat) 06/13 - Arrive in SNA at 08:45am
(Sun)06/14 -Universal Studios
(Mon)06/15 -DisneyLand
(Tue)06/16- Rest
(wed)06/17-Rest-----Grad Night
(thur) 06/18 - DCA
(Fri) 06/19- (knotts)---Grad Night
(sat) 06/20 Rest
(sun) 06/21 rest
Mon 06/22 Disney park

How bad is it to change Disneyland to Sunday? and do this schedule

(Sat) 06/13 - Arrive in SNA at 08:45am
(Sun)06/14 -Disneyland
(Mon)06/15 -
(Tue)06/16- DCA
(wed)06/17- Universal
(thur) 06/18 -
(Fri) 06/19- (knotts)---Grad Night
(sat) 06/20 Rest
(sun) 06/21 rest
Mon 06/22 Disney park

Disneyland DCA

Knotts has to be after DCA and for the chart the second row of numbers is rating for DL and third is DCA

Just throwing it out there, but have you considered park hopping? I personally enjoy the flexibility of having the whole place available to eat and play. As far as your two plans go, I think I would go for the first plan. I expect the more experienced folks to hop on here soon, but I would imagine Disney is more busy on a weekend.

NavyDad is taking a huge group, so that $50 a person really adds up for park hopping.

I think either way is fine. Typically Sundays are very busy, but with summer trips it may not be that big of a difference. Why does Knotts have to be after DCA? Just curious.

On 6/20 and 6/21 I think the crowd levels you have listed are a bit low. Its likely going to be pretty crowded on both of those days. Probably very crowded on father's day.

I think that your first itinerary is just fine! Will you be renting a car while you're there? If so, you could take some or all of your crew to the Discovery Cube museum in Orange County. There's a really cool DIS podcast about it. I've never been there myself but I totally want to go see it!

I thought I would point out that AP holders are blocked June 17-20. I would expect bigger crowds before and after those dates. Especially the 21st since it's the last weekend date available to passholders for the summer.

That is lower level APs. Deluxe Aps are only blocked on Saturdays and Holidays in the summer, and Premiums aren't blocked at all.
