So I read sooo much about the tonga toast and macadamia nut pancakes from Kona. We have a dinner Ressie for our Anniversary on Oct. 3rd, but we won't be doing breakfast. I see all the pics of both and I just couldn't take it anymore. So, I decided to surprise hubby and our friend with a fancy breakfast.
I have had the strawberry cream cheese stuffed french toast at Fresh at the Dolphin and I have made that ever since. So, I skipped making the Tonga toast.
(I had bought the nuts to make the chocolate macadamia nut bars from the F&W Australia booth that we had 2 years ago..the recipe was in the F&W cookbook that I just got on sale and we ended up just eating the nuts and I had these leftover....at least they got converted into something Disney).
For the Macadamia nut pancakes I improvised a bit but made them very tropical. They were a HUGE hit.
I had 2 bananas that were getting ripe so I mashed those up.
I added about 1/2 a cup of plain instant uncooked quaker oats (gotta add fiber).
I added about a teaspoon of cinnamon.
I had about a 1/4 of a cup of macadamia nuts that I chopped into small pieces
Then I put in Aunt Jemimah instant pancake mix, a couple of cups and enough water to make up the instant mix.
I let it sit for a few minutes so the oats can soften, then cooked up the pancakes (it made enough for 3 adults, plus a plate worth of leftovers).
I also sliced up some fresh strawberries and added a couple spoonfuls of smuckers strawberry jam to them and microwaved it all for about 45 seconds, stirred, and then the strawberries were glazed and we ate them on top of the pancakes. I didn't have any pineapple to make the pineapple topping, but this worked out great.
If you happen to have some kona coffee laying around, you might want to serve that with the pancakes.
