I forgot to take something out for dinner, now what to make fast?

OK, so I got busy around here today cleaning, etc. I was going to go down to the freezer this morning and take something out to thaw out. Well here it is 4:30 and I forgot.

Now what can I make for dinner with nothing thawed out? What to do in a bind?
 
Going out would be my first choice, but I am not sure if that is an option for you at the moment.....so, what about homemade macaroni and cheese with a salad???? That is always a good standby in my house. :sunny:
 
Do you have time to run to the store very quickly? Because I know of something you can make in almost no time if you can get to a grocery store.


Quick-n-Easy Chicken Quesadillas

Ingredients
LARGE (burritosized) flour tortillas
2 cans flaked chicken (it's on the same aisle as the canned tuna)
2 containers of 'garden style' cream cheese (it has like onions, green peppers and stuff in it)
2 bags of 'Mexican' style shredded cheese

Directions:
Put the oven on 'broil' and let it heat up. Meanwhile......


In a large bowl, combine the chicken, cream cheese and one bag of the cheese until well mixed. On a cookie sheet, lay out 3-4 tortillas flat. Spread an equal amount of cheese/chicken mixture onto each tortilla and sprinkle on more shredded cheese. Top with another tortilla and press down slightly, so they are stuck together. Place in the oven for 3-5 min until the tortillas begin to brown and the chicken/cheese mixture is melted/heated through. :) Remove from oven and let cool slightly before slicing (we use a pizza cutter).

Or, make spaghetti if you have a jarred spaghetti sauce on hand so you won't have to brown any meat for the sauce.
 
Invest in a microwave if you don't have one. It can defrost small pieces like beef stew and chops in under 30 minutes. Have frozen fish sticks or frozen breaded chicken strips with french fries. No defrosting and dinner in 20 minutes.
 
I like the breakfast for dinner option :) . We enjoy doing that once in a while. Or how about some frozen ravioli and sauce? Add a nice salad and some bread and you're done.
 
What about breakfast pizza?? My kids love it!! I use the canned biscuits (like pillsbury), place them in the bottom of a greased baking dish. I then beat some eggs, add cheese to the eggs and pour it on top of the uncooked biscuits. It takes about a half hour or so but it's yummy! You can add ham or bacon to it if you like as well. My nephew does this but uses the frozen hash browns as his "crust". :)

Sounds like a Fort Wilderness breakfast. :cool1:
 
How about pasta and peas or pasta with spinach? Make it like a quick alfredo sauce and add the veggies and lots of freshly grated cheese. Yum!
Or going out is always fun!
 
With the exception of spaghetti and jarred sauce or breakfast for dinner, I couldn't throw together any of those options with what is usually on hand in my house!

If you don't have a microwave to quick defrost something, you can stick it in the sink under cool running water and it will thaw out pretty quickly. Another thing I do, is take frozen ground beef and put it directly in the fry pan for browning. As one side browns, you flip it and scrape off the cooked meat with your spatula. Keep repeating until the meat is thawed and browned.

I've also thrown together a tuna noodle casserole in a pinch.
 
I'm thinking about making grilled cheese sandwiches myself. However, I always keep a few boxes of jambalaya and red beans & rice mix in the pantry. I'll probably quick thaw a bit of sausage and make some jambalaya.
 
I just sent my sons to pick up Mexican. I am getting two taquitos with 2 cheese quesadillas, black beans and rice. It also comes with nacho chips. Enough to feed me at least twice, all for $5.95. The place is called La Salsa and they have a salsa bar with 12 different salsas. I gave them my list, 2 fresh tomato and chilis, mango, roasted tomato and avacado lime.
And of course Flan for dessert.
Too bad I can't find a nice take out margarita place. Peggie
 
I was going to say that fish defrosts pretty quickly if you have any in the freezer. How about just sandwiches? If no lunchmeat, you can always make a fried egg sandwich.

I took the lazy way out tonight.....I had bagged salad & tossed that in a big bowl & just had diff dishes with sides of carrots, celery, tuna, shredded cheese, sliced cucumbers & diff salad dressings & my DH & I made our own salads. Kids don't eat salad so I had some frozen corn dogs for them & they just picked at the cucumbers. It's after 6pm now so I'm wondering what you decided on?
 
I ended up doing grilled cheese and soup. I already took out the chicken for tomorrow! :thumbsup2
 
My in a pinch meals are: breakfast for dinner, spaghetti with jarred sauce, tuna casserole, baked potatoes with canned chili, grilled cheese sandwiches, or Costco meatballs either baked with a sweet & sour type sauce or done in a skillet with cream of mushroom soup. I try to keep those things always in stock.
