I personally have Le Cellier as my must do on all trips, but I love Chefs and wish we were doing it this trip. Unfortunately nothing appealed to the other family going with us and no matter how much I tried to convince them it wasn't happening.

I had gotten an ADR for Le Cellier and then the Menu changed
(I didn't like what was on it) so I dropped my ADR and
got one for "Tutto Italia". I have no regrets.
I'm really looking forward to eating there.
I would definitely choose Chefs de France over Le Cellier. Le Cellier has disappointed two times out of three (mostly due to overdone, dry steaks), while Chefs de France has delighted three times of our last three visits there. We also find the atmosphere much nicer at Chefs de France, while it feels a bit closed-in at Le Cellier.
We would never change LeCellier--our must do every trip. The last three filets I have had there have been heavenly. We have not yet tried Tutto, and we have never eaten at Chef's--my DH despises that kind of food.
I did the same thing too! Well, I did not cancel the reservations, I just didn't make them. I had planned on it--but after hearing about the menu changes, I picked Chefs de France instead.
I actually changed a LeCellier reservation for.... dinner at Kona. I felt crazy doing it, because we LOVE LeCellier but we as a family were unwilling to give up any of the other ADR's. We really like all the character meals. We will def. go back to LeCellier next year.
Anyway, the good news is that I was able to give it to a person from the Dis boards who really, really,wanted it so very bad. She has missed out on reservations the last 2 times. So, it actually makes me feel really good about it
We LOVED Le Cellier.
We LOVED Tutto Italia.
Never eaten at Chefs.
I don't know about cancelling one for the other as we 100% loved both our meals.
I think if I had to pick Le Cellier or Tutto Italia I would choose Le Cellier. Mainly because I cannot get that cheddar cheese soup anywhere else in the world and I would hate to miss the chance to enjoy it. And my husband swears he had the best steak of his life there.
We went to Tutto Italia once and Le Cellier twice while we were there in May. We thought Tutto was fine - expensive prices which even with DDP affects how much you pay in tip - but most of us liked our entrees and everyone loved dessert. Having said that, we don't plan to eat there when we return in October. We will however be going back to Le Cellier.
Thanks to people on DIS, I knew to order the filet without the mushrooms (they gave us the white truffle and herb butter sauce on the side). and instead of risotto I asked for the cream cheese mashed potatoes. We all loved it and had it both times we were there. We can't wait to go back.
