I always like a good hot apple pie with ice cream on top, I also love other apple things.
Kids come home from school and I pop an apple in the microwave with the core out and an inch of peel gone and put a dollop of margarine and sugar and cinnamon and the kids love this, After which I put in some ice cream to melt in the center.
The kids think fall is the best
any other ideas :cool:
 
I think today is supposed to be the "Apple Festival" in my town. I've missed it every year so far for various reasons, and today it's raining so I don't know if they're even having it.

I love the smell of apple pie baking, and have a Yankee Candle Macintosh candle burning right now!
 
Fresh apples are by far one of my all-time favorite foods. And they are finally in season around here! I got some terrific Macouns the other day at Shaw's. And I cannot wait to get to the orchards in another week or so (when this rain stops!). I make apple crisp.... that is kind of my "signature" dessert. I don't really care for apple pie (although that is a BIG thing in my family) and the crisp is SO MUCH easier than a pie. I have a nice apple peeler/corer/slicer from Pampered CHef. The kids help me run the apples through it, I throw them in the dish with the flour, cinnamon, nutmeg, sugar, toss then around. Then I throw the topping ingredients in my standing mixer (margarine or butter or butter flavored crisco, oatmeal, touch of salt, brown sugar and white sugar)...... crumble the topping over the apple mixture and throw in the oven at 375 degrees for 40 minutes (or more... we like it slightly softer).... and wa-la.... DELICIOUS!!! OOO... making me hungry right now!! .................P
 
Apples are the first thing I think of in the fall! I just put up 20 pints of applesauce...which probably won't last long around here.

I just went apple picking today and finished a pie from recipes.com. It is unique because you put a top crust on ( bought at the grocery store, of course) and pour a syrup on top- yummy! I also include apple brandy and some spices in the sauce but here is the basic recipe:

Grandma Ople's Apple Pie

INGREDIENTS:
1 recipe pastry for a 9 inch double crust pie
1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/2 cup white sugar
1/2 cup packed brown sugar
1/4 cup water
8 Granny Smith apples - peeled, cored and sliced

DIRECTIONS:
Melt butter in a sauce pan. Stir in flour to form a paste. Add white sugar, brown sugar and water; bring to a boil. Reduce temperature, and simmer 5 minutes.
Meanwhile, place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work of crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
Bake 15 minutes at 425 degrees F (220 degrees C). Reduce the temperature to 350 degrees F (175 degrees C), and continue baking for 35 to 45 minutes.
 
OOOOHHHHH!! I love apple crisp. My receipe comes from Family Fun magazine a few years ago. It's great b/c you mix all the toppings in a large ziploc bag, no mess, no dirty bowls, easy for kids to do! I'll look it up and try to post it!

Oh, and I made a Nana's Apple Cake from Tastefully Simple last night. Sooooo easy! Just add the mix, 2 eggs, and 2 cups chopped apples and bake! YUMMY!!! I also use the Pampered Chef apple peeler/corer/slicer! I love this tool, makes cutting apples very quick and easy!

Has anyone ever tried an Arkansas Black apple? Very dark skinned and very delicious! They usually come out late in the season, like Nov. They are my fav!
 
Oh yes, it's apple picking time here in Vermont. There are two orchards right on my road!!

Apple pie, Apple Crisp, Apple Dapple Cake, Carmel Apples and Candy Apples are what I do each year.

We have a GREAT crop this year!! They are delicious!
 
Remember The Waltons? I have the recipe for Applesauce Cake and Jane's Whiskey Frosting. I got it years ago from the book The Homecoming. It's very good. I like to make it for Thanksgiving or Christmas. My dad especially loved it. Now that he's gone it always makes me think of him.

Applesauce Cake
1 c. butter
1 c. sugar
2 c. applesauce
1 c. light raisins
1 c. chopped walnuts
1 t. baking soda
3 1/2 c. sifted flour
2 eggs
1 t. cinnamon
2 t. cloves
2 t. nutmeg
pinch of salt
Jane's Whiskey Frosting

Sift together: flour, soda, salt, cinnamon, cloves, and nutmeg. Take 1/2 c. flour mixture and stir into nuts and raisins. Set both aside. Cream butter until soft. Add sugar a little at a time until smooth. Beat eggs. Alternately stir in flour and applesauce. When mixed add nuts and raisins. Mix well. Pour into greased cake mold. Bake at 350 for 1 hour. Cool 10 minutes and turn onto cake rack. Frost when cool.

Jane's Whiskey Frosting
1/4 c. butter
1 T. cream
2 c. powdered sugar
2 T. whiskey
pinch of salt

Cream butter. Add sugar and salt. Add cream and whiskey. Whip until smooth. Frost cake.
 
I really like Apple Crisp but my kids don't. Thus, it doesn't pay to make it for just one. Does anyone have a "scaled back" recipe that would work for just a few servings. Just hate wasting the leftovers. I enjoy it hot out of the oven with ice cream--yumm! There was a guy I worked with more than 20 years ago that made the best I have ever had. Too bad I didn't have his recipe.

I have a recipe for sour cram apple pie that is to die for. Just made some last night for a party on Sat. I also make carmel apple pie. YUMMY!!!!

Every year we go apple picking and I make pies, apple sause and of course we drink lots of apple cider. I just love fall.
 
I freeze apple pie...both before baking and after (great for just getting one piece out ;) )

Apple and Dried Cranberry Pie

2 1/2 cups all purpose flour
1 tablespoon sugar
1 cup unsalted butter, chilled -- cut 1 inch thick
8 tablespoons ice water
Filling
1 cup dried cranberries
2/3 cup sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground allspice
2 1/4 pounds pippin apples, peeled, quartered, cored -- thin sliced
1 1/2 tablespoons brandy
1 teaspoon vanilla extract
1 large egg yok
1 teaspoon whipping cream

Crust: Blend flour, sugar and salt in processor. Add butter. Cut in using on/off turns until the butter is cut into 1/4" pieces. Add 7 tablespoons ice water and blend until moist clumps form, adding more water by
tablespoonfuls if dough is dry. Gather dough into ball. Divide into two pieces. Flatten pieces into disks. Wrap in plastic. Chill at least 30 minutes. Let soften at room temp before rolling out.
Filling: Position rack in bottom third of oven and preheat to 375ºF.
Combine cranberries, sugar, flour and allspice in large bowl.
Mix in apples, then brandy and vanilla extract.
Roll out 1 dough disk on floured surface to 13" round. Transfer to a 9" diameter pie dish.
Spoon in apple filling, mounding slightly in center.
Roll out second dough disk on floured surface to 13" round. Drape crust over filling. Trim overhang to 1/2". Press crust edges together; fold under. Crimp edge.
Stir yolk and cream in small bowl to blend. Brush over top(but NOT edge) of pie. Cut slits in top crust to allow steam to escape.
Bake pie until apples are tender and crust is golden (about 1 hour).
Transfer to rack. Let stand 1 hour. Serve pie warm or at room temp.

Apple Dumplings Deluxe

1 egg -- beaten
8 ounces sour cream
2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
4 cups thinly sliced, peeled cooking apples
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 1/2 cups water
1 1/4 cups packed brown sugar
1 cup sugar
2 tablespoons cornstarch
2 tablespoons lemon juice
2 tablespoons butter or margarine

For dough: Combine, in a medium bowl, egg and sour cream.
In a small bowl stir together flour, 2 tablespoons sugar, baking powder, baking soda and salt. Add to sour cream mix. Mix well.
On a lightly floured surface, roll dough to a 12" square. Spread apples atop.
In a small bowl combine 1/4 cup sugar, cinnamon, nutmeg; sprinkle atop apples. Carefully roll up dough. Cut into twelve 1" slices.
Place slices, cut side down, in a greased 13x9" baking pan. Stir together water, brown sugar, 1 cup sugar, cornstarch and lemon juice; pour over slices in pan. Dot with butter.
Bake, uncovered, at 350 degrees for 35-40 minutes or until golden.

Apple Streusel Coffee Cake

Streusel
1 1/4 cups packed light brown sugar
3/4 cup flour
1/2 cup cold butter -- cut in small cubes
2 teaspoons cinnamon
1 cup walnuts -- coarsely chopped
Cake
3 1/4 cups flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
3/4 cup butter or margarine -- room temperature
1 1/4 cups sugar
3 large eggs
2 teaspoons vanilla
16 ounces plain low-fat yogurt
2 Granny Smith OR Golden Delicious apples,
peeled ,cored -- cut in 1/2" dice


Oven to 350 degrees. Grease and flour a 14 cup nonstick pan.
Streusel: In a medium bowl, stir brown sugar, flour, butter and cinnamon with a fork or rub together with fingertips until crumbly and butter is completely incorporated. Stir in walnuts.
Cake: Mix flour, baking powder and baking soda in a small bowl. Beat butter and sugar in a large bowl with electric mixer until fluffy, about 2 minutes. Beat in eggs, one at a time, beating well after each. Beat in vanilla and yogurt. With mixer on low speed, beat in flour mixture just until blended, scraping down bowl as necessary.
Spoon 3 cups batter into pan. spread evenly. Sprinkle with 1/4 cup streusel, apples and 1/2 cup streusel. Spoon on remaining batter and spread evenly. Sprinkle with remaining streusel, pressing down lightly so it sticks to batter.
Bake 50-60 minutes or until a pick inserted in cake comes out clean. Cool in pan on wire rack 15 minutes. Place cookie sheet over pan and carefully invert both. Remove pan and cool completely.
To serve: Invert onto serving platter.

Caramel Apple Salad

1 package dry instant butterscotch pudding
8 ounces crushed pineapple with juice

Mix cool whip, butterscotch pudding and crushed pineapple with juice. Add apples, roasted nuts and marshmallows.
Keep in refrigerator until ready to serve.

1/2 cup dry nonfat milk
1/3 cup sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 egg
1/2 cup cold water
1 cup peeled apples -- finely chopped
1/4 cup melted butter
1/3 cup chopped nuts
1/4 cup firmly packed brown sugar

Combine flour, dry milk, sugar, baking powder, 1/2 teaspoon cinnamon and salt in large bowl.
Beat egg with water. Stir in apple and butter.
Add all at once to flour mixture. Stir just until moistened (batter will be very stiff).
Fill 12 buttered 2 1/2" muffin cups 2/3 full.
Combine nuts, brown sugar and remaining 1/2 teaspoon cinnamon. Sprinkle over each muffin.
Bake at 375 degrees for 15-20 minutes. Remove from pan immediately. Serve warm.
