I would definitely go for Park Hopping. Are you sure 3 days will be enough since you'll be there a week? I would go to the parks earlier in the week, expecting crowds to be greater on Friday and Saturday. Get your daughters to list out what they absolutely want to do or see (like which characters, rides and shows) so that you will plan for these. You can plan some character meals around their preferences, and then not spend as long in line to see them at the parks. Go at opening, do the top must-sees, then take a break in the afternoon. Go back or to another park for the evening. You will want to determine the EMH parks for each day and decide if they help you or if you should avoid them. (Depends on what you want to do at that park, and they do make that park busier that day.) Usually the MK EMH is helpful if you need to do a lot of Fantasyland stuff.
