Hypothetical Dining Option Question

Okay, let's see if anyone can figure out the answer to this one:

Plan to spend 8 days/7nts. at WDW. Will probably spend 1 day in middle of the trip for a "beach day" offsite. I'd still buy the 7 day MYW tix because, for a couple of dollars more than the 5 day, we could spend some time at the parks on both arrival and departure days. NOW, if I added the Dining Option it has to be for the length of stay. Since we probably wouldn't use it on "beach day", could I use that day's food sit-down dinner "credit" and, say, departure day's sit-down dinner "credit" and use them for a signature restaurant on arrival day for dinner? I think I can, but wanted to run it by other Dis'ers!

My understanding is that we will get a 'bank' of dining credits and can use them however we want. So, I'd say that the answer to your question is yes.
