I watched the view this morning and this recipe was featured. Does anyone have this recipe and is willing to post it??? Has anyone tried it... is it any good???

I think that this recipe is from the hungry girl 200 under 200 book. I am not sure if I want to purchase this book because it seems that they use a lot of artificial sweeteners and other artificial products which I am trying to avoid. If this is not the case please let me know.

Yes, you are right about the extensive use of artificial sweeteners and such like that in her books, but I have both of them and if I pick and choose the healthier recipes, I am usually happy with the results.

HG Cheeseburger Quesadilla

PER SERVING: 186 calories, 3.5g fat, 989mg sodium, 27g carbs, 16g fiber, 2.5g sugar, 26g protein

Ingredients:

1 large La Tortilla Factory Smart and Delicious low carb/high fiber tortilla

1 Boca Original meatless burger, thawed

1 slice fat-free American cheese, chopped

1 Tb. chopped onion

1 Tb. chopped pickles

Optional ingredients: salt, pepper, garlic powder
Optional topping: ketchup

DIRECTIONS: Preheat oven to 350 degrees.

Cut burger into small bite-sized pieces. Bring a pan sprayed with nonstick spray to medium heat on the stove. Add onion and burger pieces. Cook for 2 to 3 minutes until onion is soft. Season mixture to taste with optional ingredients, if you like.

Spray a medium-large baking sheet lightly with nonstick spray. Lay tortilla flat on the sheet and top evenly with the cheese pieces. Bake in the oven for about 2 minutes, until cheese has melted slightly. Leave oven on. Spread burger mixture over one half of the tortilla. Top with pickles and fold tortilla in half, pressing down lightly with a spatula to seal.

Bake in the oven for another 3 to 5 minutes, until tortilla edges are slightly brown. Remove from oven and cut into triangles. Top or serve with ketchup, if you like.



I have a question about this recipe. First... it doesn't mention what type of pickles... sweet pickles, dill pickles, sour pickles?? Choosing any one of those over another would potentially change the sugar and sodium ratings. Not a big deal I suppose.

For myself, I would rather use a Gardenburger original rather than the Boca. I like the taste better. And I would rather use a bit of low-fat cheese (WW makes decent lowfat cheeses) than the fat-free stuff, which I find rather icky.

I will let you know how it is. I think that I am going to make it early next week. I may forget to mention that it is a veggie burger to my husband ;). I plan to use dill pickles, I think that will make it taste more like a fast food type burger. I totally agree with you about the FF cheese, YUCK!!! I'll use low fat.

Thanks for the recipe pjlla. I looked all over for it yesterday. Are the HG's books worth buying? Or can you just post your favorite recipes for me? He, he, he!
Made the asian dish HG had on the view yesterday. Love the tofu spaghetti noodles. So low in calories. Yippee!
 
I have posted some other HG recipes on here before. Not sure if "search" is working well at the moment.

I have made the Scoopable Chinese chicken salad and love it. Planning on making it tomorrow. I will probably make a half a batch though, because I can't eat it fast enough before it wants to get icky. No one else in the family enjoys it. I have also made the Yum Yum chocolate muffins (chocolate cake mix and canned pumpkin). They are delicious. I made the Slammin' cream cheese and smoked salmon breakfast sandwiches also (not sure I got the name right). It was really good, but I think that the fat-free cream cheese is kind of icky, so I used half of that and half real cream cheese. Next time I might use light cream cheese and NO fat free. It just has a bad texture to me.

A great many of her recipes are more like "ideas" than true recipes. It is like she put all of her favorite low-cal, high fiber foods on the counter and started brain storming how to put them together in different ways. For example, that cheeseburger quesadilla is super simple, as long as you have the right products. Not exactly a genius idea, but definitely a good one. I am a terrible cook and I have NO ideas when it comes to the kitchen, so I really appreciate her books. But I agree that many of the recipes use ingredients that I am not comfortable eating in any quantity (like Cool Whip Free), but she acknowledges that in her books.

I think that the books are great for someone like me. I have been on WW for 20 months now (this time) and I get really bored with my foods sometimes. It is nice to have a handy resource of new ideas to try. And many of the recipes make just one or two servings, so that is perfect, since my family would NOT eat most of those things. Plus sometimes it gives me new ideas of things to try myself and I have made a few of my own "recipes" now.
