How to spend a long day non park day with no resort

You are welcome to use the pool and the resort on day of check out…..

Your departure sounds I lot like mine usually do….

We usually get a breakfast after check out….
Hang by the pool ….

Bail out of the pool around 3

Head to the springs. Mid day the dock bar at the boat house is fairly easy to get a seat….

Couple of dozen oysters and little necks,
Burger ….

Oddly enough the oysters are farmed about 15 minutes from home …

Back to the hotel and head to the airport about 5:30 or 6
 
You might also look at "ResortPass" They offer day passes to their pools, cabanas, meeting rooms, and sometimes even a "day rate rooms"
 
Besides animal viewing I have also spent time wandering the halls at AKL because they have interesting native artwork scattered throughout. In addition to Trader Sams, Geyser Point at WL is a nice place to hang out and have a drink/bite to eat. Take the boat over from MK, maybe explore the WL a little too. There is also a boat from Poly to MK, so you could do both lounges in whatever order.

I did something similar last year, stayed at Universal in Dec and transferred to the Swan for 2 nights to do MVMCP and then spend a day in Epcot, and my last partial day resort hopping. Resorts probably not decorated yet for Christmas in November however.

We'll be there November 19-20, so basically the weekend before Thanksgiving. I'm hoping there will be Christmas decorations by that late in November.
 

Does the airport have any lounges you can buy access to? Might be a nice place to relax before your flight.

As an FYI, most of the airport lounges (anything related to Am Ex / Priority Pass / "The Club at MCO" / Delta) will not allow you to enter the lounge until 3 hours before your departure time. Not sure if the Admiral's Club or United Lounge has changed their policies yet.

I'm flying out of Sanford and I have no idea if they have a lounge or not. I usually fly through MCO.
 
In June, our flight didn’t leave until 9:30. We had a leisurely late brunch at Boma, played mini golf, then rode the skyliner stopping for a drink at the resorts. It was fun to relax and people watch at hotels where we haven’t spent much time. We considered a movie as well but there wasn’t anything we were interested in.

There will be. For the past couple of years, we’ve arrived at WDW two weeks up to 1.5 weeks before Thanksgiving and decorations have been up when we’ve arrived.

Really? When did that begin? Maybe after 2014. That's when DH retired. Before that he did LOTS of international travel in his job, involving many lay-overs of much longer than 3 hrs. He mostly used the United Club, which in some airports had sleeping rooms, showers, etc. Not in any of the US airports I remember. Guess like many things in air travel, times change.

My wife and I always carry a deck of cards. You could do the same, find a place to relax, get a cocktail, and play a few hands of gin.

I've experienced this too at Delta and United lounges. I will say that it's up to the discretion of the lounge so if it's not that busy and they're not short staffed you might be in luck.
 
There is a sticky on this forum for the monthly activity calendars for the different resorts. Check out the one for Animal Kingdom Lodge, since you will be there anyway, to see if any of the activities would be interesting. Do the same for any other resort you plan to visit.
