how to cook a beef brisket?

so its tender ? hoe do you cut it going the same way as the lines ??

I have a GREAT recipe that's easy peazy and tastes like you made a special meal.

In a deep large skillet on the stove, combine one can of cranberry sauce with the berries still in it (i.e. not jellied) and a 16 oz jar of PLAIN tomato sauce, i.e. no cheese peppers, mushrooms, beef, seasonings, etc. make sure the cranberry sauce melts into the sauce. add garlic, onion powder, salt pepper to taste. once that is done place the entire beef into the mixture in the skillet, turn over so the beef is covered, and then have it cook in there on medium for 2-3 hours - should have no bubbling.

the acid from the cranberries and tomato sauce tenderize the meat and it tastes so good! it's our christmas meal. we usually eat rice withit and put the sauce over the rice too. YUM!

We do ours bbq style. (no other way in Texas!)

pour on an entire bottle of Liquid Smoke; sprinkle on celery salt, garlic salt, and onion salt; cover in foil and marinate in frig overnight.

Sprinkle on 1/3 cup water and slow cook at 300 degrees for 10 hours. Keep it sealed in a foil "tent" while cooking.

When it's finished, drain off the liquid; separate the fat (stick it in the frig--remove the congealed stuff at the top) and mix the broth with a big jar/bottle of your favorite BBQ sauce.

Cut meat in thin slices against the grain. Serve with sauce.

what does against the grain mean ?? the oppisite way of the strings of meat are going?

Yes, that is what it means. Briskets are oblong shaped---you cut them top to bottom on the short side. Does that make sense?
