How much Chipped Ham per person??

When I buy it, I get regular deli ham shaved super thin. I know the ham loaf stuff you're talking about, but that's not what I use for chipped ham.

Thanks for the clarification. I thought it would make a great quick dinner but I'm pretty sure I'd never get my family or the boys to eat ham loaf in anyform. I'm not even sure I'd survive the buying of it:rotfl: as my tag states I have just a "few" food issues.

Okay, around here there is this thing that is a whole bunch of leftover ham pieces/parts that is pressed and formed into a square like a loaf of bread and then deli sliced for sandwiches, even Oscar Mayer has one. It's cheap and gross and beyond edible, at least I think it is. It is refered to as chipped or choped ham loaf. Is this what you're talking about?
What you are describing is chopped ham. Chipped ham is just really, really, really thin slices of ham. Paper thin, so you can read through it and it falls apart. My Mother in law(PA Dutch) calls it frizzled ham. I had no idea that chipped ham(or other lunchmeats) was a regional thing.

This is the chipped ham that Pittsburgher's are familiar with:

I wish it were still 59 cents a lb, LOL. I think it's disgusting plain, but I like it cooked into BBQ. Like someone else said, this is the cheapest cut of deli ham that you can get. Expensive ham just doesn't taste nearly as good BBQ'd...probably because this has so much fat in it that adds to the flavor.

Yes - lunch meat and cheese is regional.

How about brick cheese? No not cheese in the shape of a brick or log but cheese named "Brick Cheese". My kids love it broiled on homemade buns with a little salt and pepper. Yummm...

see that's what I think of when I hear chipped ham, although it is mostly called chopped ham when you look at the deli cases here in the midwest. I have a friend who used to buy it A LOT when they were really broke, I think she called it chipped ham and that's why I associate the name and that particular product. However thin shaved ham is fine and I'm already planning on trying the recipie on Tiffany's blog.

.

There is something that looks like it has a bunch of pieces of who knows what in it that they call "head cheese" here----I have to tell you just by the name of it alone I couldn't eat that stuff LOL.

Well that looks interesting, I would never eat it though!

Last time we did this for work, we did 3 pounds, and had tons left over, cause we had other food. I would go with 5 pounds tops... Happy tailgating!

Pittsburghs goin to the superbowl:cool1::cool1::cool1::thumbsup2
( I am a Duquesne Alum..:thumbsup2)

Head cheese...yum...NOT. My granddad (a dairy farmer and rancher) made his own.

WARNING.......skip if you have a weak stomache...

Take the head of a cow and remove the top layer of hide, boil it, what ever floats off, stick it in a mold and press with weight. Cool it down, de-mold, slice and eat. Keep refridgerated. It's like a french pate or tureen only made with the stuff in the head (cheeks, jowls, brains, but no eyes or hair). It's supposed to be very tender and 'juciy' and fatty which is why it molds.

I just want to hurl thinking about it. My mom says 'at least you didn't have to be around while it was cooking'.

Thank the Lord, that I was born after the head cheese days.

Coincidentally, one of the Superbowl recipes on Relish this week is:

Isaly's Ham Barbeque Sandwiches!

I won't give away the recipe since it's a subscription site, but it calls for 3 pounds to serve 12 people.

Just thought I would contribute!

Never heard of chipped ham before either. I'll go with a brat and a beer. GO PACKERS :)

I have a recipe for this on my blog. I used 2 pounds of ham when I made them and in the post I said it fed 6 of us plus we had leftovers for several days. I'm guessing that 2 lbs. made enough for 12-15 servings.

I bet 4 lbs. would be enough.

Hi Tiffany- I just wanted to thank you for your recipe and sharing your website! The name of this thread intrigued me since I had never hear of Chipped Ham. I checked out your site- it is really great! I just finished having your Chipped Ham recipe for dinner and it actually brought my DH close to tears as his beloved Grammy use to make this for him as a child and he hasn't had it in 30 years (she died over 20 years ago). So, I just wanted to send you a huge thanks! :goodvibes

I have to thank you too TiffanyK! DH's cousin made this Ham BBQ for us years ago. We loved it so much she gave us the recipe. Somewhere along the way I lost the recipe. I have tried googling it but came up with nothing. This looks like that recipe. Something about the grape jelly makes it so good. I do make mine in the crockpot though. Another homerun recipe! Thanks!
