I was surprised to hit 10,000 steps one morning. We had walked to DHS from Boardwalk, I then rode TOT and as I was walking through the que on RNRC I felt my fitbit vibrating. Not really sold on accuracy!
We average about 25-30k on our trips but we will walk everywhere if given the option. If you are staying in 1 park & doing a lot of rides & shows I'd expect the number to be lower, more like 18-20k. If you are doing Epcot & then walking to DHS then my number is probably about what to expect. We walked back & forth between these 2 parks a few times last trip & got 35k.
Since I was pushing a stroller (wrist not moving) barely got 2,000, but we were at the park all day. But I have a co-worker that did some baking and was using the mixer a lot and got over 5,000 steps. So no, not very accurate.

If you want to try, I wear mine on my ankle for the types of reasons you listed. I'd suggest doing some measured steps with it the first few times to make sure it is counting accurately. You may have to toggle the dominant hand setting.
I just used my iphone app, which is a less accurate. It was in my pocket and averaged around 25-30k a day. This included spending a few afternoons at Epcot. Mileage wise it converted to 10-12 miles or so. We noticed that all of us who had this app had different numbers, those with longer legs had less steps
I just got back and averaged about 20k as well, usually spending 8-9 hours in the parks. Although my Epcot day was 27k, but that involved walking back and forth to our hotel at Yacht Club for a mid-day break, then returning in the evening.
We wore our fitbits on our Disneyland trip last December and averaged 20-25k steps per day. 10-11 miles, usually. I would think that it might be similar in WDW.
We were there first week of January with a 3 and 5 year old in a double stroller. (Hubs pushed the stroller most of the time) Even with shorter park hours, working on a preschoolers stamina level, and going back to the room several days for naptime, I got 17-23K.
I'm sure it was actually higher than that as I can remember numerous times where I had picked my daughter up and walked with her, held one of the kids' hands on the side I wear my Fitbit, etc, and I wasn't moving my arm enough to get steps.
BF and I just got back from a trip and it was about 20k each. We took our days slowly and enjoyed our time there, no rushing because we had everything pretty much planned out. I have a sedentary job so going form 2k to 20k made for some very painful hips at the end of the day.
Yes. I see this when at the gym. If I am on a treadmill, and have my hands on the bar / handle, it wont record the steps. Having your hands on the stroller steadies your arm just enough to miscount steps.
