How long to get luggage and a cab (uber/lyft) from MCO?

Originally we had super early flights booked out, but then Jet Blue changed our flights in both directions. Now the earliest flight out of our town is a few hours later and gets us in closer to noon. We were planning to have lots of pool and relaxation time before an early dinner at Disney Springs. I am just trying to decide whether to cancel the dinner and move it to another down day at the hotel. Our hotel is in the Disney Springs area, so about 20 minutes from MCO. Traffic is not predictable of course, or a delayed flight. We are the first flight out on our airline, but there is always weather and mechanical issues or other monkey wrenches. But how long should I estimate for getting off the plane, getting bags and an uber/lyft? I have no idea what the situation at the airport is like these days. Are there crazy delays because of low staff? Could it take an hour+ just waiting for bags plus a car? (There is literally not a single thing that I can't find a way to overplan when it comes to vacations.)
