Often we just go for the last few hours. It is the same as going 1st thing in the morning. You'll have most of the park to yourself. The only downside of doing this in the summer is the afternoon thunderstorms. We were there this past Thursday and by 5pm it was lightening and pouring.

When we go towards closing, often we cannot find a chair when we arrive. Once we placed our belongings just on the ground since we couldn't find a chair.
Most people seem to start leaving by 2pm. It's REALLY crowded by then and stays really crowded until about 4pm.
For lunch I recommend the BBQ sandwich at the counter service by shark reef. DH got the turkey wrap and he enjoyed that too.
We often take sandwiches and drinks. No glass is allowed. I have a cooler that is a collapsable one with a shoulder strap. We freeze water bottles the night before and use them as icepacks. This past Thursday we were staying on site at All Star Sport instead of coming from home, so that wasn't possible. What I did was bring sandwhich bags and put ice in them from the ice machine. It kept things cold for a few hours, but by 2pm the ice had all melted.
Be sure to try the icecream sunday in a bucket. It's $7.49 and is yummy! You get to keep the bucket. Don't have kids, no problem, any kid would be more than happy to have that bucket passed onto them!
