How long for signature meals?

The title says it all I think. We've dined at many TS places in WDW, but not at any signatures. I'm trying to plan for our August trip. We'll have the DxDDP, so we get appetizers, entrees, and desserts.

I'm curious about how long to expect from start (that is being seated) to finish.

Are the signature restaurants significantly slower than regular non-signature TS places?

I'm not seeking to spread out the meal because though my kids are good at meals, they are not going to want to spend 2-3 hours at a restaurant when we're in Disney, but I also really want to try some of the more upscale restaurants.

I'm thinking of these places in particular: Narcoosee's, Citricos, Flying Fish, and California Grill.

With the dining plan, lol, you will spend 2-3 hours in those restaurants at each meal...if you want to make sure you get your money's worth and eat each course.

These are restaurants where there isn't any rushing, there is time between courses to enjoy!

Agreed, I would plan for at least 2 hours at the Signatures (especially if you plan to have appy, entree & dessert). :goodvibes
 

From drinks, apps, entrees, dessert and coffee we were at Jiko, FF and Yachtsman for 90 minutes
 
I'm going to go to the Yachtsman, Narcoossee's, and Citricos in May. I'll let the server know we expect to be out in less than 2 hours and their ability to get us out in 90 minutes is greatly appreciated. To me, I'd rather spend another 30 minutes pounding down a beer in Germany than sitting at a dinner table with the pace of a snail.
