How late MK snacks?

How late do snacks stay open in MK? We will be there April 7th and it is open till 11 with a 9pm spectro and 10pm wishes. We wish to get ice cream sandwiches from the bakery (prob), how late will they be open? It seems like whenever I want to late night snack they close everything down?

I've never seen the bakery or the ice cream place close before or right after open. We've stayed until closing time but Main St is still going for another hour after that.
