This is a good question. I don't have the answer but let me bump you to the top and see if someone knows.

I know we ate at Spoodle's on the Boardwalk one night after Illuminations. I think our PS was for 9:30. There were very few folks there.

I really don't know the offical answer. I am sure WDW Dining can tell you the last seatings. 1-407-WDW-DINE

Some of the resorts have 24-hour dining, but not most. I know that CR does. It's just their counter service place, and the menu is very abridged, but the last time we were there, they didn't close.
