How late before park crowds drop?

If the parks reach capacity how late do you have to wait before crowds thin out and you won't be waiting in line (for someone to leave) to get in?
We were hoping to go afternoon/early evening the day before Easter. I've never been to the parks when they're anywhere near capacity so this will be a new experience for me.
 
Generally around dinner 5pm. After 7pm ish, people pile in for the fireworks.

Late morning is also a good chance to get in.

We won't be arriving in Anaheim until at least noon so late morning isn't an option but dinner time should work.
 
Won't the app provide info on gate closure due to capacity?

I don't think the official Disneyland App lists whether there are any entry restrictions. DLR hasn't been consistent about announcing when there are entry restrictions, but the best method I've found is to keep an eye on social media. They do (sometimes) announce (e.g., tweet) when the parking lots have closed (and re-opened) and on rare occasions, when there are some entry gate restrictions (not always).
