How far out do they release park hours and event times?

Approx. 6 months.

The "bad news" is that many of the hours and events that are posted that early
will be changed and updated as the actual dates get closer.

Expect the updates to happen within 40-14 days in advance,
with even a possibility of changes up until the day-of.

Bit do they change EMH? Or are they more likely to add more rather than switch an am to pm or even switch parks?
 

Also, I waited and waited until just a couple weeks ago for them to release the Star Wars Dessert Party/Fireworks schedule for November. So if you're looking for special events, you may have to wait until 2-3 months before your trip.

Mainly I'm just wondering when EMHam will be in which park on which days. I'm hoping that when my 180+ window opens up that I wouldn't waste spending time getting a pre-park opening breakfast on an EMHam day.

Pre-park opening breakfasts are becoming far less "valuable" for guests over the past couple of years.
Unwise to plan one with any kind of "advantage" in mind.
Too many things can be "added" or "adjusted" prior to any given date.
 
Only 7 weeks until we go but a number of parades and fireworks won't open up to confirm timings to add to my MDE planner!
Great news they are appearing on the app (just not on website on iPad).

Yeah, I've seen that, especially with TH for FoP and NRJ. The only "advantage" I was looking for was simply not to cut into actual available park time for breakfast... not necessarily to have an opportunity bolt over to whatever attraction is that park's current IT attraction... not really able to bolt around anyway with my bad knee, DW's broken ankle, and DD4's pokiness and DD1's stroller.
