How easy is it to get an Uber / Lyft from canaveral back to WDW?

You can use the Uber website to check prices. I just pre-booked an Uber from PC to MCO for our April cruise and for an XL it is $111 - which is less than 4 of us on the bus or me renting a car for 3 hours.
One word of caution, this is not a guaranteed ride back to MCO. A driver will have to pick up the trip. Have a back up plan if they cancel the ride. I've had it happen (not from PC to MCO, but other locations with a pre-booked ride).

I checked yesterday for an instant booking and it was $113 so thought that’s about right, checked to prebook and it was $163!
 

For various reasons I have never used Uber/Lyft - how “guaranteed” is a pre-booked ride? Can the driver cancel that morning? Just curious.

Same. I’ve had some instances where no driver ever accepted. Luckily, I was alone those times and they were all in places with other easy options, but it’s too much of a risk for a family vacation in my book.
 
Be aware that Port Canaveral isn't a big city and doesn't have an airport close by. If there are many cruise ships in town, you will have a hard time getting someone to accept the Uber/Lyft pickup. You will not be able to get a rental unless you book ahead of time or wait until everyone returns their rental for their cruise that day. I've seen many people turned away trying to get a rental without a reservation. Some people are not fazed by hiccups but I'm a planner that the unknown would ruin my trip.
 
Done it with zero issues. The pricing will surge but we always try to get immediately off the ship anyway so it seemed like we avoid the biggest rush

I pre-booked a ride when I had an early flight out of DC at the end of a work trip last year. Had 0 issues. Granted, that was a 15 minute ride from the hotel to the airport. But I believe it's no different than booking one on the spot.

Pre-book is not a guarantee until you're assigned a driver (usually about an hour before your ride). And even then, they could cancel. There's never a guarantee with any rideshare. I've done prebook several times with no issue (not at Port Canaveral), but my parents did have an issue once (again, not at PC).

We usually choose to go with a transfer company like Suntransfers or equivalent. It can wind up costing more in some places, but we’ve never had any issues with any of the services we’ve booked with.

It's not guaranteed at all, it just means they have the request for a ride in their queue and when it gets closer to the requested time, it will go out to drivers to pick up. And yes, a driver can cancel at any time prior to you getting in the car. I had a pick up request at my airport and it was a busy time. I had 5 rides cancelled before I got one who actually showed up. Then it cost me $85 for the same ride that cost me $21 when I was dropped off. I could have hailed a taxi for $50, but it was at a different place in the airport and I was too tired to walk there with all my luggage. Surge pricing.

I had a flight come in SUPER late (like after the transport train from the concourses stopped) and I was like "ugh I gotta lyft home" and it was $60, and this is when I worked as a concierge who knew that from the airport to my area of town it would be $40.....I smacked my head so much when I remembered hahahaha

I know the feeling! I was flying into Logan (Boston) and it was at the same time a Celtics game was getting out and quite a few flights had arrived. I was flying from Los Angeles, so I just wanted to get home! I waited an hour for a driver to finally pick up my ride, and it wasn't just me, there were a ton of people waiting. The taxi stand was in a different location not close to where I was, so I just sucked it up and paid 4 times what I paid when I was dropped off. And of course when I got home I made the mistake of going back into the app to check the price. It was back down to $23 from the $85 I paid.... definite head smack!
 
Last month, my town got a big snowstorm the day I needed to fly out, overseas trip. We don't GET much snow - maybe twice a Winter. And my friends are saying "Oh, you can just get an Uber or Lyft!" I had not desire to get a driver unfamiliar with HOW to drive in snow. A lot of people in those big SUVs just think they can because they are big. Plus, an overseas flight with 2 connections, I didn't want to risk missing that first flight.

I ended up driving myself, in my car, and spending the night at an airport hotel. There's convenience. And then there's peace of mind. I just felt better knowing I would make it than being up all night worrying about a driver canceling or not being able to deal with slippery roads.

That said, I know people who use them all the time with no problems.
