How early can you book on site Disney hotels? The website is only showing up to Dec 2023 right now?

That’s as far as you can book now. When Disney releases room rates for 2024, you’ll be able to book into next year. I believe at that point it would be 499 days out, up to 12/31/24. There is no specific date they are released but this year’s rates were released on June 8th last year.

Recently? I thought they changed it so that you couldn't book until package rates were published...

No, that was the old way but is no longer the case. You’ll need to wait for 2024 rates to be released, which last year was first week of June. Presumably similar timing this year, but of course the mouse could always change things so just keep an eye out.
