How do you make your mashed potatoes?

For us, the basics include peel, dice, boil and mash with the hand masher. Butter, salt and pepper to taste. Like NikitaZee, we like a little texture.

Our favorite recipe is much like the one MarcyinPA mentions, using Philadelphia cheese and sour cream, as well as garlic, fresh rosemary and sage.

We'll have to try the versions with chicken stock and / or cheddar cheese - both ways sound great.

Depends on my mood, type of potatoes we have and other ingredients on hand. Little this, little that. Skin on or off. Masher always. Milk and or cream, half and half, broth any or all. Butter always.

One thing I don't ever do anymore is try recipes that use sour cream or cream cheese. Have tried 2 different times and we just don't care for that flavor in the mashed potatoes. Which is odd since I like both of them! Guess we are just plain mash potato people! But man are they good!
 

I use a ricer as well. I use the norm...butter, salt, pepper, milk and add a bit of extra virgin olive oil. My friend that worked in the kitchen at the Waldorf Astoria in NYC gave me that tip.
 
Peeled and boiled red skin potatoes. Mashed with butter, cream or milk, salt, pepper and one small grated raw onion.
 
Cut up, leave skins on, boil, drain, add milk, small amount of butter, cheddar cheese, bacon bits, pepper, onion salt and chopped garlic.:woohoo:
 
I hate to admit it because I consider myself pretty good in the kitchen but...

Boil 2 cups of water and add a package of Betty Crocker potatoe flakes, let sit a minute, fluff with a fork and serve;)

I only eat potatoes on Thanksgiving and they are "real" but DD really likes mashed potatoes and the Betty Crocker are only 80 calories/serving so when she started WW that's what I switched her to. And they go onsale for $1:thumbsup2

I found this recipe on Allrecipes.com a couple years ago, and have only made them that way ever since! My family LOVES this recipe!

Note: Unless you really need enough potatoes to feed 100, notice that you can adjust the serving size from 100 to whatever you need. We find that "one of their servings" will actually make a good side for 2, in our house...so I usually make 10 servings for our family of 6, and we still have plenty of leftovers :)

*ETA, My favorite thing to do with the leftovers is make Shepards pie, like this recipe

I love making the pie with golden mushroom soup. It's under dad's easy shepards pie or something on that site. I use fresh corn, brocolli or green beans with it.

For potatoes, I just mix with butter and milk,hand mashed with unpeeled red potatoes.
 
Peel, chop, and boil potatoes 10-15 mins, depending on size.

While potatoes boil, in a small saucepan I heat up some milk and butter (no exact measurements).

When potatoes are done, I drain them, and then add the heatred milk/melted butter mixture as needed. I then throw in shredded cheese, salt, and pepper.
