St. Patrick's day is next week and I am a novice when it comes to cooking corned beef (a nice way of saying I stink at it :laughing:).

Does anyone have a good recipe?

What kind of cut do you buy? When I went to the store there was flat cut, thick cut and point cut. Which one is best?

Which brand is best or are they all about the same?

How do you cook it? Do you bake or boil? Do you add any seasonings to the pot?

What do you make with it? I always make carrots and cabbage in the same pot. I also buy Irish Soda bread and Pechter's rye bread.

Do you serve it with mustard? What kind?

Lastly, what do you drink with it? Ale or beer? Which brand?

What about a dessert?
 
Corned beef and cabbage is one of my favorite meals, but it's funny that I ONLY make it at this time of year. :confused3

We always have our family over for a big dinner so I make several corned beefs. Last year I did it two ways: one in the crockpot and one on the stove with a bottle of Guinness thrown in. I use the flat cut. Point cut is the cheapest and toughest IMO. I never heard of thick cut. I put cabbage, carrots and potatoes, too, but sometimes cook them seperately. For spices, I usually throw in whatever spice packet comes with them and a couple of extra cinnamon sticks.

I serve with mustard, horseradish and malt vinegar -- all on the side. Along with that, rye bread, irish soda bread and several types of beer from Guiness to Smithwicks to whatever appeals to me at the time.

Dessert is always strawberry shortcake.
 
mmmmm Corned Beef. I used to make it for New Years and then St. Patrick's but since we started watching our cholesterol...we go out once a year so there are no leftovers. Corned Beef coming up! I used my Dutch Oven with the rack and sauerkraut in the bottom. Served it with horseradish sauce and mashed potatoes-hand mashed.

I cook it (by itself, with the seasoning packet) in the crock pot the day before St. Patrick's Day. Take it out of the crock pot, put it in the fridge. The next day I slice it, put it in foil and put it in the oven to warm it up. While it is in the oven warming up, I cook the cabbage, potatoes and carrots in boiling water on the stove.

Oh, I buy the point cut. I don't know why, just because my Mom buys that kind ;)
 

I buy the cheapest I can.
Cook it in the crock pot. Put a little water in the bottom and the seasoning packet that comes with the meat. That's it.
Cook it all day.I start out on high, but usually lower it to low. If I am working all day, I put it on low at about 0600 and then leave it all day til I get home.

I too tend to buy the cheapest cut I can get.
I place red potatos in the bottom of the crockpot, sprinkle both sides of the meat with the seasoning packet and place on top of the taters. No added water, I like it salty. I cook it on high if I start it midday and low if I start in the morning.

I serve with the taters, a mixed green salad and brown and yellow mustard on the side.
 
I buy the flat cut simmer on the stove for 3 1/2 to 4 hours with the seasonings it comes with or if none I put some mrs dash and black pepper. After that I transfer to a baking dish and pour over mixture of mustard, brown sugar and water and bake for about 1/2 hr on 350. I also boil either the potatoes or cabbage in the water the corned beef was in. So good.
 
We just had corned beef tonite for supper! I put the flat cut in the crockpot frozen added a little bit of water, sprinkled seasoning packet on it, put it on medium and walked away . Made reuben sandwiches with it - DH loves them. Good luck!
 
We cook the corned beef in a crock pot with water and the seasoning packet that comes with it, on low for 8-10hrs.

After it's cooked through, we make a honey mustard glaze. My husband usually does equal parts honey and mustard, mine's a little different - I do a mixture of honey, mustard, and brown sugar, to taste. We glaze the corned beef and put in the oven for approx. 20min, just to warm the glaze and basically keep the beef warm while the veggies are cooking.

At the same time, the liquid that was used to cook the corned beef is transferred to a pot on the stove and the cabbage, carrots, and potatoes are boiled in the cooking liquid.

It sounds very time-consuming when I type it all out, but it's really not. The sweet mustard glaze on the corned beef is really very good. Not so good for corned beef hash the next day due to the sweetness of the glaze, but with my family, there's not usually much left for hash anyway! The kids really love it.
 
My MIL makes a good corned beef and cabbage.

She buys what looks to be a 'flat' cut, but makes sure that it is as thick as possible with lots of good meat.

She says she does NOT add the extra packet of seasoning.
It still taste very much 'corned beef'

She cooks in the oven... though I believe a crock-pot would also be very good.
I do not think I would boil beef....

She does cook it with the carrots, potatoes, etc...
I, personally, would prefer my cabbage cooked separately... I think unless you add it halfway thru the baking/roasting, it would disintegrate a lot.

Man, I might have to go buy a corned beef tomorrow and cook it!!!!
 
I always use the crock pot. There are some good sounding recipes on here! I might have to try something new!
 
I buy a flat cut and bake it at a low temp., with enough water to cover it. I skip the seasoning packet and add a few garlic cloves and a couple of bay leaves. I boil the potatoes ond cabbage seperately.

I've tried boiling, baking and doing it in the crockpot, and baking gives the best result IMO.
 
I have never made it myself (mom is teaching me how to make it this year)...she said to boil it , she wraps the seasoning pack that comes with it in a cheese cloth, she boils it then throws the cabbage, potatoes, and carrots in with it....

BUT

She said the trick is to make sure and CUT IT AGAINST the grain!!! If you cut with the grain it will be TOUGH!!!!

Just prepped mine today as I have to work tomorrow. We're having company for dinner tomorrow;)

I picked up 2 corned beef rounds; placed then in the crockpot w a small bag of red potatoes at the bottom, used the seasoning packets added a little bit of cabbage and some minced garlic and peppercorns.

In another pan I chopped more cabbage, carrots,onions and another bag of baby red potatoes w garlic, peppercorns and poured chicken broth over them.

Tomorrow I will make some mashed potatoes to go w :lovestruc

I had no idea I could make it in the crockpot till I read it here~:rotfl2:

And I plan on trying the last 1/2 hour baking it w the mustard/brownsugar glaze ;)
