How do you make your chicken quesadillas?

I'm thinking of making chicken quesadillas tonight. I've never made them before. What kind of spices do you use? Do you make a cheese sauce? Or do you just sprinkle shredded cheese on it? Do you warm up the tortillas in the oven or microwave? Do you do chicken chunks....shredded chicken????

I know this is probably such a SIMPLE thing to make but I'm just looking for your best recipe.

I marinate boneless chicken in lime juice, fajita seasoning, and a little oil for an hour. Then I drain and slice the chicken, and saute it until just cooked. I layer the chicken in flour tortillas with montery jack cheese, and sometimes sauteed onions, peppers, and corn (or some combination). I cook the quesadillas on a griddle, flipping once, until the cheese is melted and the tortilla is browned in spots and crispy. I serve them with guacamole, pico de gallo, and sour cream.

My recipe is similiar.
Dice chicken breasts into small cubes, marinate in bowl with 1tsp. oil, 1 mashed garlic, salt,pepper, and a little bit of chili powder. Cook chicken on a griddle if available. I like to add onions and bell peppers to my chicken. Next, warm your tortillas. Now add your cooked chicken and shredded monterrey jack cheese or shredded jalapeno jack cheese to the tortillas. I serve ours with a red salsa, guacamole, and sour cream. A pitcher of lemonade is great with these:)
 
The way I do mine is so easy! I call the Mexican Restaurant, place my order, and go pick it up!! :lmao:

a little simpler.. lol

cut up chicken breast ( have used boneless thighs when funds were limited) cook it in a skillet. Add a partial packet of taco seasoning and half a 16 oz jar of mild salsa. Then i take the flour tortilla, spinkle a little mexican mix shredded cheese, add some chicken, and sprinkle with a little more cheese and cook on a griddle. I put cheese below and on top the chicken as it helps to hold the tortilla closed when it melts. Once the cheese starts to melt, i push down slightly on the tortilla to " glue" it shut lol.
I serve with sour cream, salsa, and hot sauce.
 
I shred a mix of American and pepperjack cheeses, and use Morningstar veggie chicken. I also serve it with wholly guacamole. Sooo good!
 
I take two cans of canned chicken ( or left over chicken) put in bowl

Stir in half jar of salsa

layer of cheese on tortilla
Layer of chicken mix
Layer of cheese

Bake for 10-15 mins at 35
 
I go to La Hacienda down the street from my house and gorge myself on their other wonderful treats while I'm there!
 
I usually use left over chicken from my chicken in a crockpot recipe.

Super easy:

3 frozen, boneless, skinless chicken breasts (they are very large from Costco)
Taco seasoning
2 drained cans of rotel

Low all day long. We usually make taco salad the 1st night, burritos the 2nd, then chicken quesadillas the 3rd.

I use flour tortillas with a mexican blend shredded cheese. That's it. So easy.
 
I always use leftover meat for quesadillas. Beef chicken or pork, it's all works. Sliced, shredded, diced or cubed, doesn't really make a difference.

I just layer the shredded cheese, the meat, then some salsa in the tortilla.

2 tips for awesome quesadillas can be used together or separate. Adds flavor:
Lightly sprinkle salt in the bottom of your pan or griddle, before you cook the dillas.
Lightly butter the outside of the tortilla before you fill it.
 
I spray some Pam in the skillet, toss a tortilla in there. Add the (cooked) chicken and whatever else I want in the quesadilla, sprinkle shreded cheese (I like a lot) then put another tortilla on top. Spray the top with Pam. Let it cook a while until the bottom tortilla starts to brown, then flip it over and cook the other side until it starts to brown. Take it out of the pan, toss it on the plate and cut into 6 wedges. Serve with sour cream and salsa.
 
Saute two chicken breasts in pan. Cut into small pieces.

Turn oven to broil.

Brush veggie oil lightly over four tortillas. Put two oil side down on cookie sheet.

Layer chicken, cheese, onions, olives, etc (whatever you want) and cover with other two tortillas.

Broil in oven until one side is brown and crispy...flip over and broil other side until brown and crispy.

Using pizza cutter, cut into slices and serve with sour cream, salsa and homemade guac. :goodvibes
