How do you make Chicken salad sandwiches??

I have a craving for Chicken salad..... Not much seems appealing to me these days so this really has me bouncing off the walls!! (now lets hope I feel like eatting it AFTER I make it!)

SO far I am thinking mayo, celery, green onions, salt and pepper.... ANything else I should add??


What do you put in yours????

I add about the same things I would for tuna salad which seems to be different every time I make it just depending on what I have but usually mayo onion celery if I have them a little green pepper.
 
I usually buy it pre-made at the store...it is expensive, but awfully good.

Looks like chicken, mayo, celery,pepper and maybe some salt.
 

grinder and make it fine......then add the mayo or salad dressing....onions and celery.....it is so good to be that way.....we make all our finger rolls in the grinder too.....yummy
 
I usually cube the chicken in like 1/4 to 1/2" pieces and cook in a fry pan with olive oil and seasoned salt and pepper. Then mix with mayo, a little ranch dressing, a little lemon juice, celery, celery seed, paprika, ( I don't like onions in chicken salad, though sometimes I'll use the tops from scallions), and then the most important ingredient.,.....Slice a handful of grapes in half and fold them in.
 
Chicken breast (shredded), white grapes (halved), salt and pepper.

When I first saw chicken salad with white grapes, I almost didn't eat it. Now that's the only way we want it. I had it by accident at a local restaurant a couple of years ago.
 
Along with the grapes, add some apple, walnuts and a little curry powder (leave out the onions).
 
Don't forget to put in a pickle chopped very small. YUM!
 
To make Chicken Salad I go to a tiny supermarket in the next town over. They have the BEST chicken salad Ive ever tasted. I think the secret ingredient is sweet pickles(I usually dont even like pickles). Its just awesome!
 
Geez....LOL....I forgot....I add sweet pickle relish....
 
My mom's recipe calls for a little tabasco sauce and cream cheese along with the normal chicken, mayo, salt, green onion. Make into a ball and garnish the top with strips of green and red peppers, sliced green or black olives and sesame seed. I like to serve it with crackers. When I take this, I get a lot of requests for the recipe.
 
I use shredded chicken that I make in the crock pot, then I mix it with mayo, orange juice, white wine vinegar, and Cajun seasoning. It sounds a little odd, but people always ask me for the recipe.
 
Yum. These variations sound good. I may need to make several varieties.

By the way, I like grapes in mine, too. And I hate fruit with any kind of meat. Go figure!
 
I buy the rotisserie chicken Italian style at my grocery store. Cube some of it, add celery, onions, mayo, a bit of tartar sauce and (I know this sounds gross) cranberry orange relish. It adds a bit of color and a slightly sweet/tangy flavor to it. Add a dash of black pepper and its ready.
 
Some of you guys put some pretty gross things in your chicken salad!:eek:
 
I usually add mayo, chopped celery, and a dash of garlic powder or salt.
 
Also adding the grapes, nuts and apples...yummy!!!!
