Definitely not "wet" looking! YUCK! I like mine over easy (as long as the white is not runny) scrambled or as an omelette. At home, though, I don't bother with omelettes. I make what DS calls "mega eggs." I just throw whatever I'd put in an omelette into the scrambled eggs & serve it as a big mess. The best part is I don't need to worry about flipping it.
We like shredded potatoes, mushrooms, red peppers, ham, parmesan & cheddar in it. (I think we'll have this for lunch!)
I put frozen hasbrowns on the bottom of the pan then put cooked crumbled breakfast sausage on top of that poured beaten eggs over all and topped with cheese. ( There were spices too lol garlic salt and italian seasonings)
i also like a family recipe that my grandfather invented:
take a muffin tin and spray with non-stick spray. put about a tablespoon of chili sauce in the bottom of each muffin hole. take some bacon (1 piece per hole) and ring it around the muffin hole. then crack an egg in each hole. bake it in the oven (i forget the temp or how long -- i need my recipe card!) and serve it on toasted english muffins.
It depends on my mood. Normally, fried medium. But I do like them soft scrambled or omletted sometimes. I rarely eat a boiled one, if it's boiled, I usually make it into an egg salad sandwich.
I checked all of the above, but if I have sunny side up, I have to put a slice of american cheese over the tops with a cover on them so the cheese melts and the yolks cook a little...I don't like runny yolks.
