how do you give yourself a custom title?

I'm assuming you need a certain number of posts? I can't seem to find anything about it though

I don't know if your title changes after a certain number of posts. You should be able to change it by going to your Profile page:

Click your User ID in the top right corner of the screen. Then, click the Customize Profile link across from your name. On the menu on the left, click Edit Your Details. Look under Optional Information for Custom User Title.
