Hopefully, this won't get too graphic, but I'm wondering how you get enough fiber to "keep things moving"? My body is used to lots of fruit and breads. Since I've started counting carbs, those things just don't fit in that plan, and my body isn't getting the fiber it's used to. I'm actually guessing that this may be what's keeping the scale from moving very much as well.
Any suggestions? DH suggestion is to take a liquid fiber additive like citrucel. I know I couldn't stomach metamucil (YUCKK)!

I've been making tuna salad with lots of diced green pepper, red onion and celery. I also snack on sunflower seeds - TONS of fiber there.
