Did you make the jerky yourself? If home made, then what I'm seeing online says that it can be stored at room temp for a few months if vacuum sealed, longer if kept in a freezer.

Mailing it is fine, at least within the US. BUT if it is going overseas you need to check the customs list for that country. It varies by country, and it can be surprising, sometimes, what is not allowed.
