How do I reauest a special menu?

My DS has a very unusual congenital heart defect which has left him with damage to his trachea and esophagus and, therefore, he is restricted to a liquid/soft food diet. He cannot eat any foods which do not break down completely in his mouth (i.e. no meats, no raw veggies, no hard breads, popcorn, nuts, etc.)
We have ADRs for Liberty Tree Tavern, The Spirit of Aloha and the Princess Breakfast at Norway, which I believe are buffet or family style meals. How do I make sure that there are foods available which he can (and will) eat? I know that you can let them know of dietary restrictions but have never needed to do so in the past. (The rest of our meals are off a menu, so we can just order what he can eat.)

The chefs will make a seperate plate for people who cannot eat from buffets.

When you write her make sure you list everything he cannot eat and that he is on soft foods. Guests are allowed to bring food and drink into the parks if they have a special diet like medical and allergens. Disney goes to great lengths to meet guests' special needs.

She will help you out and make sure everything will be available. As for regular menus you can arrange for special meals to be made for him or adaptations of menu items to be made.
 
Technically you are not requesting a special menu. Make sure you include on all dining reservations that there are medical restrictions on dining; soft foods and liquids only. Remind them of this at the podium when you check in at each restaurant.

In each location a chef should come out and talk to him about the restrictions. They will work with him so he can get what he will enjoy in a way that he can eat it.
 
Besides what was already posted, I have read posts from people where the kitchen blended the food for the guest. That would probably not be available at a counter service restaurant, but should not be a problem at all for the full service restaurants.
