How do I find out?

How can you find out what resorts have fun things going on like marshmellow roast, movies, etc? Can you go to other resorts to be a part of them if you're not staying at that resort?

Ask the front desk. Most resorts have a daily list of activities. I never recalled them asking for a room key, at least for the free ones.

On the WDW site, go to the resort's web page and click on 'Recreation' on the menu (left side of page). This will list most of the activities available at that particular resort. Info is basic, so you would have to ask at your resort for specific times and locations. Phoning a resort probably wouldn't work, since you'd most likely just get a call center.
