I can relate to you firsthand. I've worked very hard over the past year to lose 35 lbs. and I'm where I want to be now. I've been doing a "modified" Weight Watchers "way of eating" (not a diet) and I work out almost everyday which includes 45-60 minutes of cardio. That being said I too was concerned about gaining weight during our last 2 visits in May and Sept. (just 2 weeks ago). Even a few lbs. takes weeks and weeks to shed!
I can tell you that both resorts we stayed at had fitness centers. Both trips were about 4-5 days long so I made sure to get to the fitness center in the morning when I woke most of the days we were there. I didn't do my normal long workout but a modified workout PLUS I also wore a pedometer all day.
Yes, you do a lot of walking in the parks, from the bus to the parks, etc but it's not "aerobic" so you're not going to burn off everything however it is easy to walk 10 miles a day in WDW...really! If you're staying in one of the larger resorts or in a resort area that has a path you can walk on and you don't want to do the gym take an early morning cardio walk for 45 minutes.
Food-wise does get a bit tricky. Depending on your activity level for that specific day can depend on what you eat.
I allowed myself 1 treat a day and I'm talking "ice cream sundae". We did eat breakfast in the room everyday though which saved time. Either some yogurt, fruit and granola or one of my alternative bagels with peanut butter.
We did lunch in the parks which again, like many previous posters mentioned, be realistic sticking with lighter foods like salads with chicken or sandwiches that you can remove one of the slices of bread from, etc. Veggies instead of fries as you can.
At dinnertime I'd sometimes have a side salad and an appetizer for dinner or if I ordered an entree I once again would order something light like fish, chicken or just eat 1/2 of the portion if it was large. Just normal common sense things you would do otherwise. We'd split desserts if we ordered them or dd would get one and I'd have a few tastes. Just because your on the DDP doesn't mean you have to eat all of what you get..
I also try as much as possible to stay away from the buffet meals. One per visit and that's it. And, I'd take very little portions of the different buffet items. Any "all you can eat family style" meals I'd not ask for seconds unless it was a request for more veggies or salads (with dressings on the side).
I do admit that I ate more than I normally do at home but when we got home I expected that I gained a pound or 2 but surprisingly didn't gain anything at all.
