How bad are the crowds first week of November?

So I've been to Disney World a number of times, but never in November. However, I was really determined to do the Food and Wine festival on my actual birthday. I'll be there first week of November. I looked at crowd calendars and picked out the best days for the parks, then I find out the Osborne Lights are opening on the same day we'll be in HS.
As I get closer to my trip I'm getting super nervous about how crowded the parks are going to be. How should I plan my park days? Is it so crowded, that I have to worry about it?
 
I will be at HS that day too! Are you able to do Epcot midweek? I've been the third week of October and the second week of November. I think free dining is keeping many resorts full....will be interesting what more experienced people tell us. I do think you should have some plans if there are things you must do
 
its not first week of September or second week of January slow and it definitely has picked up as "Jersey Week" grows, add in extended F&W and its not as empty as it once was.

That said, its still no where near peak times
 
We went Nov. 7-14 last year and it was perfect! We hardly waited for anything at any of the parks. Aside from SDMT, I think we may have waited 15 min for SM. We plan on going the same time next year, I hope it wasn't a fluke!
