MistySue...I so feel what you are going through. I am very wary of anyone making anything for my daughter who has a severe dairy allergy. We stay in a room with a kitchen and I make most of her food and bring it with us. We order from Garden Grocer and have groceries delivered to our room...easy as pie! We have been successful with the Mickey waffles and bacon, which she loves, in most places for breakfast. Also, we got Udi's blueberry muffins at Akershus...what a treat for her! I don't recall all of your son's allergies, but I know Udi's products have a lot that are multiple allergy free.
Also, every trip, we schedule a visit to BabyCakes the first night and buy treats for the week. That way, she can pick a variety of treats that we just take back to the room and she can pick something new every day. They even made a special birthday cake for us last year that was delicious! You do have to refrigerate their stuff, though, but most Disney resorts can supply you with a mini refrigerator in your room if you request it.

I have even purchased a "hot pot" cook pot in the past, when I didn't have access to a kitchen simply so that I could make pasta, soup and couscous for her then take it in a thermos.
I don't even ask anymore for special items at Disney except for the ones we have had and trust. This was my decision after a chef came out and offered us Rice Dream for dessert. It is manufactured on shared equipment with dairy products, and he didn't know that. YIKES. Good luck to you!
