How about sharing your favorite Shrimp Scampi recipe!!!

Bought 2 bags of uncooked shrimp today and I'm planning on making Shrimp Scampi for dinner on Friday night.

What's your favorite (and easy :thumbsup2) recipe?
 
McCormick makes a scampi seafood sauce. :) I have used it with really good results. One bottle is 7.5 oz. The directions are pretty easy.

Heat 1/2 cup of scampi sauce in a large skillet on medium heat. Add 1 pound large shrimp, peeled and deveined.

Cook and stir 4 minutes or just until shrimp turn pink. Serve or rice or pasta if desired.

I served it with pasta. I threw some broccoli in with the pasta as it was boiling. Easy peasy. :)

I made a shrimp newburg dish that was easy too. Really rich and creamy. The base was a shrimp sauce made by Campbell's soup. If you want that recipe, I'll post it for you.

Go to Costco.
Buy Frozen Shrimp Scampi.
Come home.
Pour into a frying pan.
Cook.
Done (in just 8 minutes).

PS - Yeah, I know it's not strictly a recipe, but it is my favorite.
 
Good thread, Scampi is a hard one. I have never been able to duplicate the tasty goodness restaurants put in front of me so I abandoned Scampi and now mix my shrimp with fresh Pesto instead.

I have never seen the McKormic stuff, guess I'll start looking.
 
I clean and pat the shrimp dry then I salt and pepper them. Heat butter in a skillet and cook the shrimp. Then I remove the shrimp and make the sauce in the same skillet and pour it over the shrimp and toss. My sauce varies as I don't 'measure' things but I use lemon juice and some zest, lots of garlic, butter and some dry white wine-vermouth, leftover pinot grigio or whatever and deglaze the skillet with it early in the process. I cook it down a bit before I add it to the shrimp. Hope this helps. Bon appetit. I'm also hoping you have frozen shrimp as this is Sunday and you are talking Friday. I also use some dried herbs like oregano and parsley in the sauce; just a little.
 
Scampi is pretty basic, not hard to do at all. I pretty much do what the poster above me suggests. A little garlic, lemon, butter, white wine and it's scampi. My DH likes "sopping sauce" so I'll add a can of chicken broth and Italian seasoning thickened with a little flour when I make chicken scampi.

I picked it up near a seafood freezer. There was a large shelf of seafood sauces that caught my eye right next to the freezer. There was tartar sauce and cocktail sauce on the shelves too, so anywhere you find those you'll probably see the McCormick Scampi sauce.

It was the first time I had seen it myself. I love shrimp but I'm often at a loss on how to prepare it. So that came in handy. And it was really quick!
 
....I just made it last Wednesday:

1-1/2 to 2 lbs cleaned, deveined shrimp
1-1/2 sticks butter
freshly ground black pepper [to taste]
2 oz. white wine
3 cloves chopped garlic
1/2 t. cornstarch & 1 t. water (mixed together to make a 'paste')
2 T. Italian bread crumbs (I use gluten-free for my DH)


In saucepan, melt butter over low heat. Add all ingredients, except shrimp, cornstarch paste, and bread crumbs, heating for about 2 or 3 minutes. Add cornstarch paste to thicken, stirring. Place raw shrimp on a oven-proof serving platter. Pour mixture evenly over shrimp. Sprinkle with bread crumbs. Place in pre-heated broiler for about 5-6 minutes, until bubbly and all shrimp turn pink. Serve over white rice.

This is the one I came up with through trial and error. It is very quick and easy. It takes less than a half hour to make.

Ingredients:

1# Medium or large shrimp (deveined and peeled)
12-16 oz of cooked pasta like linguini
3 Tbsp butter
3 Tbsp Olive Oil
2 Cloves garlic
1-2 Tbsp Lemon Juice
1/4-1/2 cup chicken broth
1/2 cup heavy cream or half & half
Dash of red pepper flakes
Dash of Basil or Fresh Basil leaves
2-3 Tbsp Parmesan cheese

Melt butter and olive oil together in a large frying pan. Add shrimp and garlic. Saute together on low heat until shrimp is pink. Remove shrimp from pan. Turn the heat up to medium, add chicken broth and lemon juice and stir until well mixed and pan is de-glazed. Pour in half and half (or cream). Sprinkle in red pepper flakes and cook until well blended.
Turn off the heat and add the cooked pasta, basil and shrimp and mix or toss together. Pour onto a serving plate or bowl and sprinkle parmesan cheese on top.
 
1 lb cleaned shrimp...I prefer tails off too, but thats optional
2 T olive oil
2 T butter
3 cloves of garlic minced

Melt butter in olive oil
Throw in garlic for 30 seconds
Add shrimp and sauté for 5 mi it's...don't overcook!!!

If you want a little more sauce, add 1/2 cup or less of chicken broth and if you happen to have any white wine open, add a tablespoon or two..... Or three.;)

Last night I added 3-4 T of fresh dill and served it over jasmine rice.
