Call house keeping and ask for new sheets. We have never had a problem getting any normal thing that we needed. The Mousekeeping staff has always been very accommodating.
Housekeeping is there day and night. I've heard stories where someone in the group was ill in the middle of the night and housekeeping came and did a tough cleaning job and left extra towels and sheets - all at no additional charge.
If you think someone in your party may have an accident, please bring along a liner! I know stuff like this must happen all the time in the hotel industry, but I hate thinking about being the next person to get that bed.

Sounds like you have a little one that still has occasional night accidents. Obviously you aren't expected to use the public laundry in the middle of the night just to remake the bed and go back to sleep. I think you could probably even ask for spare sheets just in case (explain why) and keep them on hand. Then you could always launder the spare set yourself the next day. I'm not 100% sure this would work, but it couldn't hurt to ask.
