I just started South Beach Diet, but it is slightly different so I need some ideas of what to shop for and cook! They are past induction and will be here for two days. I tried looking on line and couldn't easily find food lists. Here is what I was thinking of serving - can anyone tell me if I'm planning things that are okay for them?

Breakfasts - eggs w/vegies & moz cheese, canadian bacon

lunches - salads, deli meat, vegies w/ hummus, cheeses

dinners - chicken w/ spices, roasted vegies
minestrone soup

I also have some whole wheat pitas and/or tortillas but they could easily skip those if the other stuff has too high carbs.

The ingredients I'm unsure about are tomatoes, eggplant, beans.

Am I in the right ballpark? I'd love to do some sort of sugar free dessert one night too - would blackberries with whipped cream be out of the question?

Tomatoes have a fairly medium carb count. Each small tomatoe has about 4 grams of carb. You'll want to check with your guests if that's an acceptable level of carbs. If they're past induction, I should think it would be.

Eggplant has 3 grams of carbs per 1/2 cup. Again, check with your guests.

The type of beans you have will make a difference. Green and wax beans have about 5 grams of carbs per 1/2 cup. Kidney, black, garbanzo.....those types of beans have high carb counts, so be careful which kinds of beans you're going to serve. Watch the hummus too. It has the garbanzo beans which have a really high carb count. I think the Tahini in the Hummus might have a lot of carbs too.

Blackberries with whipped cream sounds good!!! Blackberries aren't listed on my carb counter, but raspberries, strawberries, and blueberries all have reasonably low carb counts. (2-4 grams per serving)
 
Look through our list of recipes <b>HERE</b> there are some great recipes there.

Try the spicy sausage cheese balls, so yummy. My husband took them to work and all of the non atkins people just scarfed them up right away.

I like to make the chicken drummettes. I bread them with parmesan cheese and deep fry them, they are excellent, too.
 
Thanks, that helps. It looks like beans are the biggest thing that is different from my plan - so I'll avoid those. I'll give the recipe thread a search.
