Looking for something nice, but not too expensive. Think we should just stick with value or go for off property..we want to add a couple days of Universal and Sea World..along with a day trip to the beach to this trip.

The value resorts are more convenient and usually are in the $100 range per night. They are easier to get to the Disney parks and also you have the added bonus of the extended hours for Disney resort guests. If you want to stay off property, you can find deals at a few sites like http://www.hotelmartusa.com/ http://www.priceline.com/ or http://www.hotelkingdom.com/ these sites will save you money and if you do a little research (many have shuttles to the theme parks)you can find out which hotels are right for you and your family,

I'd suggesting posting on the Orlando Hotels board instead of here. You'll get a lot more responses there.

Personally, if you plan to do a lot of non-Disney stuff like the beach, Universal and Sea World, I think it would be silly to pay Disney's prices for an onsite value resort. For half as much, or less, you could get a bigger place offsite. You can rent a 2-bedroom timeshare for under $40/nite. There is just no comparison IMO between that and a plain tiny room at All Stars or Pop Century.
