Hotel living...meal ideas

Crock pot for sure. There is a thread here that has some great crock pot recipes. Some of the best have campbells soups, not sure about the packages, and now I am unsure if I want to try them:rotfl:
 
here's my quick " mex-mess". (just saw the black bean quesadilla listed above...great minds, lol)




you need is a frying pan and a microwave

1 can black beans/ drained
1 can corn/ drained
tblspn oil for bottom of pan
diced onion (buy bag of frozen for convenience)
taco sauce packet (you will only use 1/2)
shredded mex cheese
1/4 cup salsa
1 tablespoon brown sugar
soft tortilla shells and tostito chips(optional)
lettuce(optional)

pour oil in pan, add about a 1/8 c of diced onion, or more to preference, cook about 5 minutes
add drained black beans and corn, simmer another 2-3 minutes
add 1/2 packet of taco sauce, brown sugar, salsa, stir and simmer another 5 minutes.
sprinkle mex cheese on to taco shells and melt in microwave..maybe 20 seconds?
scoop "mex-mess" onto melted cheese tortilla shell, add lettuce and enjoy!

can be used as a dip too with chips.

you ca also use pinto beans, instead or in addition. If you have boneless chicken breast cook and shred that and add it in...DH likes it better than Chipotle' :thumbsup2
 
Taco's
just fry up the meat - the rest isn't cooked

lettuce, grated cheese, taco spice, salsa, sour cream, taco shells, maybe some diced tomatoes and green onion.

No oven needed - ready in 15 mins with only one pan
 
Walking tacos
Brown the meat
Add the seasoning
Throw the meat, lettuce, tomato, cheese and sour cream in single bags of Doritos or Fritos

I love those Campbell crock pot pouches. We like the tavern pot roast and the Moroccan chicken ones the best.

Also look at recipes for camping or RVs. You can probably find a few things that route too. That's how I found the walking tacos
 

We do road trips where we eat in every night
Mostly I get a rotisserie chick...eat half one day - chill and next day make a salad with the chicken
OR make a pasta salad with chick next night
 
Wow thanks for all the ideas for when I am on travel for work or its too hot to use the oven. I am so stalking this thread.

However I have to ask. Where do the residence Inn's cheap out and not have a real stove? My company has a deal with Marriott and while I normally end up at fairfield Inn's or courtyards I have been to 3 residence Inn's (Albuquerque, Near springfield MA and near burlington VT) and they all had full real stoves.
 
Thanks everyone... I keep checking back and I love all of the ideas.

We have the manager's receptions 3 nights a week M-W.
This Residence Inn is in NC and it is about 15 years old. It is getting ready to undergo a major renovation, so maybe they will get full stoves. :)

We did get a bit of good news, we may only have one more week here!
Construction/repair is going well!
 
I love Residence inns by Marriott

BUT-there is a newish chain-Homewood Suites by Hilton
all full kitchens
some of them have really fabulous Breakfasts! We stayed in one in Asheville NC when we went to Biltmore and the Smokies-the food there was top notch!
 
I have to say, they are treating us very well.
My husband was chatting with the lady that prepares the evening food for the social hours and asked if they ever have grits for breakfast (he loves them).
She told him she would make sure he had some in the morning...
Sure enough, there were grits out this morning.

It's a little thing and we could certainly prepare them in the room, but it was a nice touch. :)
