Hotel hopping- suggestions wanted

So we have a cruised book, on-board the Dream at the end of January. We are staying on Disney property before and after the cruise for a couple days. We want to explore and see some of the other hotels, what are some do's and don'ts and must sees. We have about a day and a half and we want to hit down town of course.

both AKL/V and WL/V are definitely worth a look. so is the Polyn (my opinion) - and when are you going - during december would add gf/v and bc/v, bwi/v
