There's a bunch off of I-4 and 33. We stayed at the Hampton Inn there years ago. It's right about 40 minutes from Disney property. Also about 10 minutes from our house LOL!
The Florida Turnpike joins up with I-75 at Wildwood at about an hour from the Fort. My memory is that there aren't many hotels along that section of the interstate (gas stations and fast food). You may end up looking around the exits on the south side of Ocala which will leave you with 80-90 minutes to the Fort.
Lots of hotels in Ocala so go with a good rate or your favorite chain. Then take Hwy 429 (toll road) and come in to Disney that way by Coronado Springs.
Lake City will be your best choice at the intersection of I-75 and I-10 almost. We've used the Tru by Hilton, Home2 Suites, and Hampton Inn. That puts you about 2-2.5 hours away. If you want to get closer then you can do the Hampton Inn in Ocala (or any other chain as Ed said) that's right off I-75. If you do Lake City, the Tru had the most space if you're needing to park a camper.
As others have said Ocala would be a good place to stop. Also the State Road 200 exit has everything you could ask for in terms of store and restaurants.
